Pretzel sticks are best because they crush into uneven little pieces without turning entirely into dust. Put them in a zip-top bag and give them a few whacks with a rolling pin, a heavy mug, or the bottom of a small skillet. Not pulverized—just broken up. Crunch, not pretzel sand.

Roasted peanuts bring a deeper, nuttier flavor than plain raw peanuts would. Salted roasted peanuts work well too, even though the recipe doesn’t specify salted, for an extra little hit of salt.

Put the Rice Krispies cereal, slightly crushed pretzel sticks, and roasted peanuts in a large bowl. Give it a gentle stir so the peanuts aren’t all sitting in one spot like they’ve formed a committee. Crush the pretzels right in a zip-top bag beforehand—one or two good thumps, then stop before they turn to dust.

Place the white chocolate chips in a medium microwave-safe bowl and microwave them in 30-second increments until fully melted, stirring between each round. Be patient here. White chocolate will scorch if overheated, and then it turns thick and cranky.

Stir the melted white chocolate until it is smooth, then pour it over the cereal, pretzels, and peanuts. Mix everything together until the dry ingredients are evenly coated. Work fairly quickly, but don’t panic. This isn’t one of those recipes where game-show-contestant reflexes are needed.

Spread the mixture in an even layer on the parchment-lined baking sheet. It doesn’t need to be pressed into a perfect rectangle; just get it fairly level so it sets into a nice crunchy slab. Some clusters will be bigger than others, and that is exactly the point. Ragtag by design.

Let the candy sit until the white chocolate is fully set, about 20 minutes. In a cooler kitchen it may set right on schedule; in the middle of a humid summer afternoon, it may take a little longer. Avoid poking it every three minutes.

Once the candy is set, break it into pieces and store it in an airtight container. Irregular chunks work beautifully—some little, some generous.

Variations

A version with more crushed pretzels and fewer peanuts makes the candy extra pretzel-forward.

You can also play around with the size of the pretzel pieces. Larger pieces make the finished candy extra crunchy and a little messier to eat; smaller pieces make it easier to break into neat-ish bites. Somewhere in the middle works especially well, though the result may vary from batch to batch.

Dried cranberries can be added, but they make everything chewier, and the white chocolate tastes sweeter.

Storage & Reheating

Keep Ragtag Candies in an airtight container at room temperature once they’re set. They should stay nice and crisp for several days. Store the container behind something less exciting if needed.

If the kitchen runs warm, store them in the refrigerator, but let them sit out for a few minutes before serving for a less hard texture. Refrigeration can make the candy pick up a faint refrigerator smell. A little onion, a little leftover soup—no thank you.

There is no reheating needed. Just keep them cool and dry. If they get soft from heat, they’re still edible, but the crunch loses some of its magic.
