About the Ingredients
The beef is just regular ground beef. I usually use 80/20 because that’s what I keep in the freezer, but I’ve done leaner and it works, you just lose a little richness. I don’t season it with anything because I find the mozzarella is salty enough on its own and you’ve got the herbs going on top, but if you’re the kind of person who seasons everything, a little garlic salt or Italian seasoning in the beef before you brown it is not going to hurt anything.
The flatbreads matter more than you’d think. I tried one version with those really thin lavash-style flatbreads and they got a little too crisp, almost cracker-y, before the cheese was fully melted. The naan-style ones with a little thickness and some chew to them hold up better. They get crispy at the edges and stay a little softer in the middle and that contrast is part of what makes the whole thing work.
Mozzarella — I use the pre-shredded kind, I know some people feel strongly about shredding their own, and maybe they’re right, but I am not doing that at seven o’clock on a Friday evening. The pre-shredded melts well enough. Two cups covers two flatbreads generously.
And then fresh herbs at the end. I usually go with parsley because I almost always have it. I’ve done chives, and basil is excellent here too. Use whatever you have and don’t measure it too precisely — about two tablespoons but honestly I just tear off a handful and chop it.

How to Make Them
Preheat your oven to 425°F. I do this first so it’s actually hot by the time I’m done with the beef, which takes maybe ten minutes.
Brown the ground beef in a large skillet over medium heat. Break it up as you go — I use a wooden spoon, though a silicone spatula gets into the corners a little better if you have one. You want it fully cooked through, no pink, and then drain off the fat. I pour it into a colander over the sink and give it a minute. If you skip the draining step, the flatbread bottom can get a little greasy and lose that crispness you want.
Lay your flatbreads on a baking sheet — I line mine with foil because I hate cleaning baked-on cheese, which, if you’ve ever dealt with baked-on mozzarella, you understand. Divide the beef between the two flatbreads and spread it out, edge to edge, in a fairly even layer. Then the mozzarella on top of that, covering everything well.
Bake for 10 to 12 minutes. The cheese should be melted and bubbly and the edges of the flatbread should be noticeably golden and crisp. My oven runs a little hot, so I check at 9 minutes. Yours might need a full 12. You’ll know by looking.
Pull them out, scatter the herbs over the top — this is also when I sometimes add a little drizzle of olive oil if I’m feeling fancy, which costs nothing and looks like you thought about it — and let them sit for a couple of minutes before you slice them. This part matters. I’ve burned my mouth on the cheese more times than I care to count because I wasn’t willing to wait.
Slice into squares or strips. I do squares for parties because they’re easier to pick up, strips if it’s just a few people and I want them to feel like individual servings.
Variations
A thin layer of Pizza sauce under the beef adds a little moisture and another dimension of flavor. I still make mine without it most of the time because I like the pure simplicity of the original, but if you have a jar of marinara open anyway, go for it.
I’ve tried provolone instead of mozzarella and liked it. A mozzarella-cheddar blend gets nice and golden on top in a way that’s a little more dramatic looking. Monterey Jack is mild and melts beautifully. Just don’t use fresh mozzarella — the kind packed in water — it releases too much moisture and things get soggy. I learned this the hard way and I still think about it sometimes.
If you want the beef more seasoned — a little more like a pizza topping — stir in half a teaspoon of Italian seasoning while it’s browning. It smells amazing and takes two seconds.
Leftovers
These reheat well in a regular oven at 375°F for about five minutes, which crisps the flatbread back up. The microwave makes them a little soft and I don’t recommend it, though I’ve done it in a pinch and survived. They’re honestly not bad cold either, which I say as someone who has eaten a slice standing over the kitchen sink at midnight and had no complaints.
I’ve refrigerated them for up to two days and they’re still good. Beyond that I’d say use your judgment. They don’t really last longer than that at my house anyway.
You can brown the beef the night before if you’re bringing these somewhere — cover it and refrigerate it, then just assemble and bake when you arrive. That’s probably the most practical make-ahead tip I have. The flatbreads themselves don’t need any advance prep, which is half the appeal.
