Use heavy whipping cream that is good and cold. Keep it in the coldest part of the refrigerator until ready to whip. Cold cream whips faster and holds its shape better.
For the instant espresso mix, use the instant espresso powder or crystals that dissolve easily. Don’t swap in brewed coffee here; concentrated espresso flavor is needed without Adding more liquid. Eight tablespoons sounds like a lot when measured out, and it is a lot, but it gets divided between the cream and the soaking mixture.
The graham crackers can be plain honey grahams. Nothing fancy. Thicker ones hold up a little better while getting them into the pan. Some will crack. Some will break in the coffee mixture. Life goes on.
As for cocoa powder, unsweetened is what you want for that slightly bitter finish on top. A little sieve or small strainer works well for dusting.

Instructions
In a large bowl, combine 3 tablespoons of the instant espresso mix with the chilled heavy whipping cream. Let the espresso dissolve before mixing.
Add the powdered sugar and vanilla extract, then beat with an electric mixer on medium speed until stiff peaks form. The cream should stand up when the beaters are lifted. Keep an eye on it near the end—whipped cream can go from lovely to grainy faster than seems fair.
In a shallow dish, stir together the milk and the remaining 5 tablespoons instant espresso mix. This is the graham cracker dipping mixture, and it will smell wonderfully like a coffee shop with boxes of crackers and a slightly sticky counter.
Place one graham cracker in the milk-and-espresso mixture and let it soak for just a few seconds, then transfer it to the bottom of a 9×13-inch baking dish. Don’t leave it in there too long or it will fall apart. Repeat with more soaked graham crackers until you have one complete layer across the bottom of the dish, breaking crackers as needed to fill in the spaces. The patchwork pieces will not show later, so don’t fuss.

Cover the dish tightly with plastic film and refrigerate it for at least 3 hours, though overnight is preferable. The longer chill gives the graham crackers time to turn tender and cake-like. If you want a firmer texture, place the chilled cake in the freezer for 1 hour before serving.
Just before serving, dust the top with the cocoa powder. Slice it cold and serve right away.
Variations
Chocolate curls can be added on top for a pretty finish. A vegetable peeler can be used to make them, though the result may look less like elegant curls and more like something swept out of a pencil sharpener.
The basic coffee-and-cocoa version is the one to come back to, though. Extra additions between the layers can make it too busy, with too many flavors and too much texture. The graham crackers, espresso cream, and cocoa are enough. Sometimes enough is actually enough.
For a holiday table, it’s especially nice because it can be made ahead and ignored until dessert. Keeping the oven free is always helpful.
Storage & Reheating
This keeps covered in the refrigerator for about 3 days, though the layers get softer as time goes on. The coffee flavor seems more settled on the second day, and the graham crackers are fully tender. For a firmer texture, serve straight from the freezer after that one-hour chill.
There is no reheating here, obviously. Please don’t put this in the microwave. Serve it cold from the refrigerator, or let it sit out for a few minutes if it has been frozen and is too firm to slice easily.
