Ingredient Notes

For apples, Granny Smith is the classic choice because that tartness cuts through all the sweet toppings. They hold up nicely too, which matters when little hands are pressing a skewer into them with the force of somebody assembling patio furniture.

That said, Fuji and Honeycrisp apples are both wonderful here. Honeycrisp are sweeter and juicier, so they’re especially good if your crowd isn’t wild about tart apples. Fuji has a nice firm bite and usually tastes good even when the grocery store apples are a little hit-or-miss.

For caramel sauce, I usually reach for Smucker’s if I’m buying a jar off the shelf. The refrigerated caramel dip near the produce section is also good, and it tends to be thick enough to cling to the apple slices. If you warm the caramel a little, it’s much easier to dip. Not boiling hot—nobody needs a caramel-related emergency on a Saturday afternoon—but warm enough to pour and coat.

Chocolate can be as simple as bottled chocolate sauce, the kind meant for ice cream. Or you can melt chocolate melting wafers if you want a thicker chocolate layer. I’ve done both. The sauce is easier, the melted chocolate is prettier. Life is full of these difficult choices.

As for toppings, put out what your family actually eats. No need to buy six bags of specialty things just so the countertop looks like a candy store. A few good options go a long way. Mini marshmallows, chopped peanuts, crushed graham crackers, mini M&M’s, pretzels, sprinkles—those are usually enough to make everybody happy.

  • Toppings — mini marshmallows, mini M&M’s, shredded coconut, almond slivers, crushed peanuts, chocolate chips, crushed graham crackers, crushed Oreos, crushed pretzels, sprinkles, marshmallow fluff, diced candy bar pieces… whatever sounds good
  • Lollipop sticks or small skewers
  • Salt water, if you need to hold the apple slices before serving
  • Optional: an apple slicer/corer, which I resisted buying for years and now use constantly

Instructions

Set out your toppings in a muffin tin or small bowls. I really like a muffin tin for this because it keeps everything contained—or contained-ish. If you have kids helping, do this part before you cut the apples. Otherwise they will be “helping” by eating handfuls of chocolate chips while you’re trying to find the skewers.

Slice the apples into wedges. An apple slicer/corer makes fast work of it and gives you fairly even pieces, though I will say mine occasionally launches one wedge across the counter. I don’t know if that’s the slicer or me. Probably me.

If you’re serving right away, go ahead and arrange the apple slices on a platter or cutting board. If you need them to wait—say you’re getting ready for movie night or people are arriving later—soak the slices in a salt water bath for 10 minutes to help keep them from browning. Rinse them afterward before serving. And dry them well. This part matters more than you’d think, because wet apple slices and caramel are not friends. The caramel will slide right off and sit in a puddle, looking pathetic.

Warm the caramel sauce just enough that it is easy to dip into. If you’re using melted chocolate, have that ready too. I like to put the sauces in small bowls or cups that are deep enough for dipping, rather than wide shallow dishes. It’s less elegant, perhaps, but it works better.

Press a lollipop stick or small skewer into each apple slice. You can also skip the sticks if you prefer and let everyone use a fork, but the sticks make it more fun—and, in theory, less sticky. In actual practice, somebody will still get caramel in their hair. That is simply autumn.

Dip an apple slice first into caramel or chocolate, then sprinkle on toppings while the sauce is still sticky. You can drizzle one sauce over the other if you want both caramel and chocolate. Don’t wait too long before adding the toppings, especially if you used melted chocolate, because it will begin to set.

Serve right away, while the apples are crisp and the toppings are still where they belong. Or at least mostly where they belong. I always put out napkins and then immediately regret not putting out twice as many.

Variations

For a sweeter version, use Honeycrisp apples, chocolate sauce, crushed Oreos, and mini marshmallows. The apple helps balance all that sweetness.

For a more salty-sweet version, use Granny Smith apples with caramel, crushed pretzels, and peanuts. That combination is probably my favorite, though I say that every time I make a different one. Almond slivers and coconut are good too, especially with chocolate, and chopped candy bars make it feel a little extra without requiring much effort.

You can peel the apples if that works better for your family. The slices will still hold up fine on skewers.

I did try slicing the apples very thin once, thinking it would look fancy. It did not. The thin slices bent, the sticks tore through them, and the caramel made everything slippery. They tasted fine, but it looked like I had hosted a tiny apple accident. Stick with sturdy wedges, or slice the apples crosswise into thicker rounds if you prefer that look.

Storage & Reheating

This is best served fresh, no question. Apples are apples; they start to brown and soften eventually, even when you do the salt water trick. If you have leftover plain apple slices, keep them covered in the refrigerator and use them within a day or so. They’ll still be fine for snacking, though maybe not company-pretty.

If the apple slices are already covered in caramel, chocolate, and toppings, store them in a single layer in a covered container in the fridge. The caramel may firm up, and the toppings can get a little soft—especially marshmallows and crushed graham crackers. I wouldn’t try to reheat assembled slices. Just let them sit out for a few minutes before eating so the caramel isn’t refrigerator-hard.

Extra caramel sauce and chocolate sauce can be covered and saved according to the package directions. The toppings, of course, tend to mysteriously disappear. I have never once had leftover mini M&M’s after setting up this bar. Not once.

Final Notes

There is something about apples in the fall that gets me every time. Maybe it’s because they are so ordinary the rest of the year, sitting in a bowl beside the cookies. Then caramel enters the picture and suddenly an apple feels like an occasion.
