This is the sandwich people look forward to the day after Thanksgiving. Sliced turkey, soft melted brie and sweet-tart cranberry sauce go between two halves of ciabatta and get toasted until the outside is crisp and the cheese runs. It takes ten minutes and tastes like something from a nice café.
Why You’ll Love It
- Made for leftovers. Turkey and cranberry sauce get a second life.
- Ten minutes. A skillet is all you need.
- Sweet, salty and creamy together.
What You Need
- 2 ciabatta rolls (split)
- 8 oz sliced cooked turkey
- 4 oz brie cheese (sliced, rind on or off)
- 1/3 cup cranberry sauce (whole berry is best)
- 1 cup baby spinach or arugula
- 1 tbsp Dijon mustard (optional)
- 2 tbsp butter (softened)
How to Make Turkey Cranberry and Brie Sandwich
- Spread the mustard on the bottom halves of the rolls and the cranberry sauce on the top halves.
- Layer the turkey, then the brie, then the greens on the bottoms. Close the sandwiches.
- Butter the outsides of the rolls.
- Cook in a skillet over medium heat for 3 to 4 minutes per side, pressing with a spatula, until golden and the brie is melted.
- Cut in half and serve warm.
Tips
- Medium heat is important. Too hot and the bread burns before the cheese melts.
- Press with a second heavy pan for a panini effect.
- Thin apple or pear slices are very good inside.
Serving and Storing
Serve right away with soup or chips. These don’t keep well once toasted, so make them fresh.
Frequently Asked Questions
Can I use another cheese?
Yes. Havarti, provolone or Swiss all melt nicely.
Can I use deli turkey?
Yes. Thick-sliced roasted turkey from the deli works well.
No ciabatta?
Sourdough or any sturdy bread is fine.
