With chicken breasts, onion soup mix, cream of mushroom soup, and water, it comes together with a rich, savory gravy while the oven does the work. Spoon it over mashed potatoes, rice, or buttered egg noodles—don’t waste a drop.

Ingredient Notes

The original recipe uses boneless, skinless chicken breast halves, and that is what I use. If the breasts are enormous—the kind that look like they came from a chicken that paid property taxes—I slice them horizontally or pound them a little so they cook evenly. Not paper-thin. Just enough that one end isn’t finished while the other end is still working through its issues.

For the soup, condensed cream of mushroom is the old-school choice and gives the gravy that familiar, slightly earthy flavor. I generally buy Campbell’s, though any brand works. Cream of chicken soup works for a milder gravy.

Use a packet of dry onion soup mix—Lipton Recipe Secrets is the one I grab, though store brand is absolutely fine. There is already plenty of seasoning in that little packet, so don’t start throwing salt around. I made that mistake once, and we drank water all night like we’d crossed the Mojave.

And plain water. Just one cup. Nothing glamorous. Sometimes the simplest recipes have the nerve to be the best ones.

  • 1 can condensed cream of mushroom soup — don’t dilute it before mixing
  • 1 cup water — I use tap water, because we are not making Consommé here

Instructions

Heat your oven to 350°F. Lightly grease a medium baking dish—I use my blue speckled enamel pan when I’m feeling sentimental, though any similar-sized baking dish will do just fine. That blue pan has survived three kitchens, two cross-country moves, and one unfortunate incident involving a burnt peach cobbler. It has earned its shelf space.

Arrange the 4 chicken breast halves in one layer in the prepared dish. Try not to stack them, because they need room for that gravy to get around them. If your chicken breasts are especially thick, slice them horizontally or give them a few gentle whacks with a meat mallet first. I say “gentle” because I once got carried away and tore one into something resembling chicken confetti.

In a bowl, whisk together the condensed cream of mushroom soup, dry onion soup mix, and 1 cup water until smooth. Or mostly smooth. I’m not going to pretend there aren’t occasionally little soup lumps floating around in mine; they melt into the sauce as it bakes. Just make sure the onion soup mix is stirred through and not sitting in one salty clump at the bottom.

Pour that mixture evenly over the chicken. Every piece should get a good coating. It will look pale and a little unimpressive at this point—don’t panic. A lot of very good casseroles look vaguely suspicious before they go into the oven. That’s just science, or magic, or canned soup doing what canned soup does.

Cover the pan tightly with foil and bake for 45 minutes. The foil matters. It holds in the moisture and keeps the chicken from drying out, which is especially important with breast meat. After 45 minutes, remove the foil and bake for another 15 to 20 minutes, until the chicken is cooked through and the gravy is bubbling, with a little browning around the edges.

Let the dish rest for 5 minutes before serving. I know, everybody will be circling the stove by then. But those few minutes help the chicken settle, and the gravy thickens just a bit. Spoon plenty of the gravy over each piece. Mashed potatoes are my favorite with this, though buttered noodles are awfully good too.

That’s it. Four ingredients, one pan, and no need to dirty half the kitchen. A small miracle.

Variations

If you prefer dark meat, boneless skinless chicken thighs work beautifully here and stay especially juicy. Cream of chicken soup instead of mushroom makes a milder gravy that the picky eaters seem to like.

If you want a thicker gravy for mashed potatoes, use a little less than the full cup of water. Not dramatically less—just enough to make it richer. The original version is meant to be spoonable and cozy, not stiff like wallpaper paste. Nobody wants that.

One time I tried adding fresh mushrooms, because I thought I was improving things. I was not. They released too much liquid, the gravy got thinner than I wanted, so I leave it alone now. Sometimes the old recipe knew what it was doing.

Storage & Reheating

Store leftovers in an airtight container with plenty of gravy tucked around the chicken. That extra sauce helps keep it from drying out in the refrigerator. It will keep well for a few days, though in my house it rarely makes it past lunch the next day.

To reheat, I put the chicken and gravy in a covered dish and warm it gently in the microwave, stopping once or twice to spoon the gravy over the top. You can also reheat it in a low oven, covered, until hot. Don’t blast it into oblivion—chicken breasts are not forgiving once they’ve been cooked twice.

I actually think the leftovers are better over noodles than they are the first night, which may be an unpopular opinion. The noodles soak up all that oniony brown gravy. I ate a bowl of leftover Chicken Fairmont noodles standing at the counter and felt briefly as if life was manageable.

Briefly. Still counts.

Final Notes

This version may bake a little darker on top if baked a little longer. The gravy is still the part worth coming back for.

Although next time I may make six chicken breasts instead of four. Because apparently “I’m just having a little” means nothing in this family, and I should know that by now…
