About the Ingredients

The yellow mustard: Regular yellow mustard from the yellow bottle. Not Dijon. I tried Dijon once and it was fine but it made the sauce taste like it was trying to be something fancier than it is, and I think that’s actually worse. This recipe has a vibe and Dijon is off-brand for that vibe.

Here’s What You Do

Preheat the oven to 400°F. Line a baking sheet with foil — heavy duty if you have it, though regular works — and if you think of it, spray it lightly. I forget this sometimes and it doesn’t actually ruin anything, the foil still makes cleanup easy, but the spray helps the patties lift off clean.

Take your frozen patties straight from the box and put them on the pan. Leave a little breathing room between them. Don’t try to thaw them first — I know it feels wrong, I know, but this is the move. They’ll release moisture as they cook and that ends up in the pan with the sauce, which is good.

Mix your sauce. Mayonnaise, ketchup, mustard, stir until smooth. I taste it at this point and sometimes add a little more mustard if I want more bite, or a pinch of garlic powder, though strictly speaking that violates the four-ingredient thing. Your call. I’ve made it both ways and the base version is genuinely good as-is.

Spoon the sauce over the tops of the frozen patties and spread it out to the edges. Be generous. The sauce is doing two jobs: flavoring the meat and keeping it from drying out. Don’t be stingy.

Bake for 20 minutes. Then open the oven, carefully flip each patty — they’ll be releasing some liquid at this point, the pan might be a little sloshy, that’s fine — and spoon some of those pan drippings back over the tops of the patties. This is the part that feels fussy but takes about 45 seconds and makes the whole thing better.

Back in the oven for another 10 to 15 minutes. You want an internal temperature of 160°F. I use a thermometer every time — I know some people eyeball it, but ground beef is ground beef, you want to hit that number. My thermometer is ancient and lives in the junk drawer and I still use it every single time.

Let the patties rest for a few minutes before serving. I know resting seems like a thing you do with a fancy roast, but even these patties are better if you wait. The juices settle. Just put some bread on the table or something for two minutes.

Variations I’ve Tried

A version with a big spoonful of sour cream mixed into the mayo makes the sauce richer and a little more tangy — worth trying, though I didn’t love it enough to change my recipe. Stone-ground mustard brings us back to the Dijon problem.

If you want to stretch this to six patties, just scale the sauce up — three-quarters cup of mayo, three tablespoons of ketchup, a tablespoon and a half of mustard. I’ve done this for a bigger crowd and it works fine, though you may need to add a few minutes to the cooking time depending on how crowded the pan is.

A pinch of smoked paprika in the sauce is genuinely excellent. That’s the one variation I come back to.

Leftovers and Reheating

I put them in a container in the fridge and they reheat well the next day — microwave, or back in the oven at a low temperature if you have a few minutes. I’ve sliced one up cold over a salad for lunch and that was surprisingly good, in the way that cold leftover beef sometimes is. The sauce kind of sets up in the fridge overnight and gets a little thicker, which I don’t mind.

If you forget to put them away within two hours of cooking — and I’m not going to pretend I’ve never done this — toss them. Ground beef is not worth the gamble. Refrigerate within two hours, reheat to 165°F.

I was going to say something about how this recipe isn’t glamorous and I know that, but then again I’m not trying to impress anyone on a Tuesday night. The patties come out of the pan looking glossy and smelling like dinner, and someone in your house is going to say “ooh, what is that?” and you’re going to feel unreasonably good about it given how little effort you put in.

That’s the whole deal, really. That’s all I was after.
