Our [Chocolate Chip Pan Chewies](https://itsnotaboutnutrition.com/chocolate-chip-pan-chewies/) are one of the most loved recipes on this site. They are soft, chewy, brown-sugar bars made in one bowl with no mixer.

This is the Christmas version. Same easy batter, but with white chocolate chips, red dried cranberries and toasty pecans. They look festive on a cookie tray and they travel well.

  • 1 large egg
  • 2 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 tsp baking powder

How to Make It

  1. Heat the oven to 350°F. Grease a 9×9-inch pan or line it with parchment.
  2. In a bowl, stir the melted butter, brown sugar, egg and vanilla until smooth.
  3. Add the flour, baking powder, salt and baking soda. Stir just until combined.
  4. Fold in the white chocolate chips, cranberries and pecans.
  5. Spread the batter in the pan. Bake 22 to 27 minutes, until golden and a toothpick comes out mostly clean.
  6. Let cool completely in the pan before cutting into 16 bars.

Tips

  • Don’t overbake. They keep cooking in the pan. Pull them when the center is just set.
  • Cool before cutting. Warm white chocolate smears.
  • Swap the nuts. Walnuts or macadamia nuts work too, or leave them out.
  • Need a bigger batch? Double everything and bake in a 9×13 pan for 25 to 30 minutes.

Storage and Gifting

Keep in a sealed container at room temperature for up to 4 days, or freeze for up to 3 months. Stack them between sheets of parchment in a tin for gifts.
