Ingredient Notes
Use regular white sandwich bread here. The soft, squishy kind. This is not the moment for a hearty seeded loaf with ambitions. It needs to flatten easily and roll without cracking. Another soft sandwich bread could work, but white bread gives these that tender, almost pastry-like texture.
The cream cheese needs to be at room temperature so it mixes smoothly with the egg and sugar. If you forget to set it out, you can beat it longer, but you may wind up with little lumps. Not the end of civilization, obviously, but smooth is best. Full-fat cream cheese gives these the richest flavor. Reduced-fat cream cheese has its place, but it will not taste quite the same here.
You’ll divide the granulated sugar between the filling and the cinnamon-sugar topping. Don’t accidentally dump all of it into the cream cheese mixture. The remaining sugar gets mixed with the cinnamon and sprinkled over the buttered rolls, where it turns crisp and lovely in the Oven.
As for butter—use the full amount. A half cup sounds like plenty because it is plenty, but it gives the tops their golden, crackly finish. This isn’t one of those recipes where we pretend a light mist of cooking spray will create the same thing. It will not. Let’s not kid ourselves before coffee.

Instructions
Preheat the oven to 350°F and lightly grease a 9×13-inch baking dish with butter. You don’t need to slather it on like you’re frosting a cake, just enough so the bottoms don’t decide to stay behind in the pan.
Cut the crusts off the slices of white sandwich bread. You can discard them or save them for another use.
Flatten each crustless bread slice with a rolling pin until it is thin and even. Don’t mash it into oblivion, but give it a good firm roll. This part is oddly satisfying.
In a medium bowl, beat the room-temperature cream cheese until smooth. Add the egg and 1/4 cup of the granulated sugar, then mix until everything is fully combined and creamy. Scrape down the bowl if you need to; the cream cheese likes to cling to the sides like it pays rent there.

Variations
You can add a little vanilla to the cream cheese filling. These are perfectly good as written, though, and leaving well enough alone has its merits.
You can cut the rolls in halves for slightly bigger Sugar Snails or thirds for more bite-sized ones. The smaller pieces are especially nice for a staggered breakfast.
Thicker bread may seem “rustic.” That is a word often used when something didn’t turn out how expected. The thicker bread doesn’t roll as neatly, and the centers can be a bit too bready. So stick with plain soft white sandwich bread. Sometimes the humble thing is the right thing.
Storage & Reheating
Sugar Snails are best warm from the oven, no question. The tops are crispest then, and the cream cheese filling is soft and cozy. But if you have leftovers, let them cool and store them covered in the refrigerator.
They’ll keep for a few days.
To reheat, warm a few in the microwave until heated through. They’ll be softer that way, but still tasty. If you want to bring back some of the crispness, use the oven instead, warmed gently until they’re hot. Do not leave them sitting out on the counter all day because of the cream cheese and egg filling. Refrigerate these.
Final Notes
There’s something mildly ridiculous about calling them Sugar Snails, and that is meant affectionately. Nobody wants an actual snail anywhere near breakfast, thank you very much. But once they’re baked and all golden with cinnamon sugar sparkling on top, the name fits. Little spirals. Little treats. A small bit of comfort made from bread that might otherwise have gone stale on the counter.
