  • 1 teaspoon dried Italian seasoning, or dried oregano if that’s what you have
  • 1/2 teaspoon kosher salt, plus a pinch more later if it needs it
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Nonstick cooking spray or a little oil for the slow cooker, just for sanity at cleanup time

Instructions

  1. Spray the inside of your slow cooker with nonstick cooking spray, or rub it lightly with a bit of oil. This makes cleanup easier.
  2. Lay the chicken breasts in the bottom of the slow cooker in as close to a single layer as you can manage. A little overlap is fine; just try not to pile them up in a chicken mountain, because they’ll cook more evenly when they’re mostly flat.
  3. Pour the marinara sauce into a medium bowl and stir in the garlic powder, dried Italian seasoning, and kosher salt. This takes all of thirty seconds, but don’t skip mixing the seasonings in first.
  4. Pour the seasoned marinara evenly over the chicken breasts, making sure they’re covered in sauce. Use a spoon to nudge the sauce around if you need to. The chicken should be tucked in there nicely, like it has somewhere to be.
  5. Cover and cook on LOW for 4 to 5 hours or on HIGH for 2 1/2 to 3 hours, until the chicken is cooked through and easily pulls apart with a fork. Slow cookers vary more than they ought to, frankly.
  6. Use two forks to gently shred or break apart the cooked chicken right in the slow cooker, mixing it into the marinara sauce as you go. You don’t have to turn it into tiny threads; leave a few bigger, tender pieces in there. It feels more like dinner and less like sandwich filling—though it makes excellent sandwich filling too.
  7. Sprinkle the mozzarella evenly over the saucy chicken, then scatter the Parmesan over the top. Try not to stir after this point. Let that cheese sit on top and get properly melty, because that’s the whole darn point.
  8. Cover the slow cooker again and cook on LOW for another 10 to 15 minutes, until the mozzarella is melted and gooey. If you’re not ready to eat, switch the cooker to warm once the cheese has melted. Don’t leave it on LOW for another hour unless you want the edges to get a little too enthusiastic.
  9. Taste the sauce and add another pinch of salt if it needs one. Serve the cheesy chicken and sauce over cooked pasta, rice, or vegetables, making sure each serving gets plenty of sauce and that lovely melted cheese from the top.

Variations

If you want it closer to a casserole-style chicken parmesan, stir in 1/2 cup seasoned breadcrumbs after shredding the chicken and before adding the cheese. It thickens things up and gives it a little more of that familiar baked-dinner feeling.

You can also leave the chicken breasts whole instead of shredding them. Just spoon the sauce over each piece before topping with the cheeses. It’s prettier for a dinner plate, I suppose, although shredded chicken covered in melted mozzarella works well too.

A small sliced onion or a handful of sliced mushrooms can go underneath the chicken before the sauce. That technically makes this more than a six-ingredient recipe, but rules are rules until they’re inconvenient. A pinch—about 1/4 teaspoon—of red pepper flakes adds some welcome heat. For a lighter meal, use part-skim mozzarella and spoon the chicken over roasted vegetables or spaghetti squash.

Storage & Reheating

Leftovers keep well in a covered container in the refrigerator for about 3 to 4 days. Store the chicken and sauce together, and if you can, keep any pasta separate so it doesn’t soak up every last drop of marinara overnight.

Reheat individual portions in the microwave until hot, stirring once if you can. Add a spoonful of water or extra marinara if the sauce has thickened up too much. For a larger amount, warm it gently in a covered skillet or saucepan over low heat.

And please make a sandwich at least once. Pile the leftover chicken and sauce onto a toasted hoagie roll, add more mozzarella or Parmesan if you’re feeling fancy, and broil it until bubbly.
