Ingredient Notes

Boneless, skinless chicken thighs are the right choice here. They stay tender in the slow cooker and have a little more flavor than chicken breasts. You can use breasts if that’s what you’ve got, but they’re fussier and can dry out if they sit too long. Thighs are forgiving.

Use prepared ranch dressing from a bottle—the regular creamy kind. Nothing homemade is required. Any brand works, though Hidden Valley has that familiar tang.

The ranch seasoning is a one-ounce packet. Yes, both ranch dressing and ranch seasoning go in. It sounds like ranch has taken over the whole county, but it works. The dressing brings creaminess and tang; the seasoning gets down into the chicken and keeps the sauce from tasting flat.

Cube your cream cheese before it goes in. A whole block will eventually melt, but it takes more stirring. Cubes melt more evenly. Use regular full-fat cream cheese for the best texture.

Rotini is especially good because those little twists hold onto the sauce. Penne, shells, or fusilli will work if your pantry has decided to be difficult. Don’t cook the pasta in the slow cooker, though. I know it seems like it ought to work, but it gets gummy, and we don’t need that kind of disappointment at dinnertime.

  • 2 pounds boneless, skinless chicken thighs
  • 1 cup prepared ranch dressing, bottled is perfectly fine
  • 1 packet (1 ounce) ranch seasoning mix
  • 8 ounces cream cheese, cubed—I cut it into little chunks, not with any great precision
  • 12 ounces rotini pasta
  • Cooking spray or a thin film of oil for the slow cooker, optional but helpful if yours tends to cling to things

Instructions

Lightly coat the inside of your slow cooker with cooking spray or a little oil, if you’d like. Arrange the chicken thighs in an even layer along the bottom.

Drizzle the 1 cup of prepared ranch dressing over the chicken. Sprinkle the ranch seasoning mix evenly over that, then scatter the cubed cream cheese across the top. It will look a little odd at this point—pale, lumpy, not especially inspiring. Don’t meddle with it.

Cover and cook on low for 5 to 6 hours or on high for 3 to 4 hours, until the chicken is fully cooked and very tender.

When the chicken is done, shred it directly in the slow cooker with two forks. Stir everything really well so the melted cream cheese, ranch dressing, and seasoning come together into a smooth creamy sauce coating the chicken. Give it a minute if you need to; at first it can look separated, but a thorough stir usually fixes it.

Meanwhile, cook the 12 ounces of rotini in a pot of salted boiling water according to the package directions, just until al dente. Drain it well.

Add the drained rotini to the slow cooker and stir until every curl of pasta is coated in the ranch chicken sauce. Serve it hot, preferably with something green alongside for a balanced plate. Steamed broccoli, green beans, or a crisp salad all do nicely.

Variations

Steamed broccoli or peas are genuinely good here. Add them after the chicken is cooked so they keep some color and don’t turn into little sad green ghosts.

Sautéed mushrooms work too, especially if they are a favorite. A little shredded cheddar or mozzarella stirred in at the end makes the whole thing extra gooey and rich. Black pepper or chopped parsley on top can brighten it up.

Frozen spinach can make the sauce thinner. If you want vegetables, broccoli and peas are the safer road.

Chicken breasts can replace the thighs if needed, but check them on the earlier side since they can dry out faster. And if the pasta seems a little tight after it sits, stir in a small splash of hot pasta water or milk. Creamy sauces have a way of thickening up as they sit.

Storage & Reheating

Store leftovers in a covered container in the refrigerator for up to 3 days. The pasta will soak up some of that lovely sauce overnight, so don’t be alarmed when it looks thicker the next day. That’s normal.

For reheating, warm a portion in the microwave in short bursts, stirring once or twice. Add a splash of milk or hot water if it seems dry or too thick. You can also reheat it gently in a saucepan over low heat, again with a little liquid to loosen the sauce.

I don’t love freezing this one after the pasta is mixed in. Cream cheese sauces can get a little grainy after freezing and thawing, and the rotini loses its nice bite. It’s edible, sure, but “edible” is not the standard we’re aiming for.

Final Notes

There’s something oddly comforting about knowing dinner is already handled before the late-afternoon scramble begins. The slow cooker hums away on the counter, and the house starts to smell like dinner.
