Ingredients
  

  • 2 pounds boneless, skinless chicken thighs
  • 1 cup prepared ranch dressing Bottled ranch dressing is perfectly fine.
  • 1 packet (1 ounce) ranch seasoning mix
  • 8 ounces cream cheese Cube before adding.
  • 12 ounces rotini pasta
  • cooking spray or oil Optional; use to lightly coat the slow cooker.

Instructions
 

  • Lightly coat the inside of the slow cooker with cooking spray or a little oil, if desired, and arrange the chicken thighs in an even layer along the bottom.
  • Drizzle the ranch dressing over the chicken, sprinkle the ranch seasoning mix evenly over it, and scatter the cubed cream cheese across the top.
  • Cover and cook on low for 5 to 6 hours or on high for 3 to 4 hours, until the chicken is fully cooked and very tender.
  • Shred the cooked chicken directly in the slow cooker with two forks.
  • Stir everything thoroughly until the melted cream cheese, ranch dressing, and seasoning combine into a smooth, creamy sauce coating the chicken.
  • Meanwhile, cook the rotini in a pot of salted boiling water according to the package directions, just until al dente, and drain it well.
  • Add the drained rotini to the slow cooker and stir until every curl is coated in the ranch chicken sauce, then serve hot with steamed broccoli, green beans, or a crisp salad if desired.

Notes

Store leftovers in a covered container in the refrigerator for up to 3 days. Reheat portions in the microwave in short bursts or gently in a saucepan over low heat, adding a splash of milk or hot water to loosen the sauce. Freezing is not recommended after the pasta is mixed in because the cream cheese sauce can become grainy and the pasta can lose its texture.
