The meatballs: frozen, fully cooked, mini. That’s it. No judgment about brand. I’ve used several and they all come out fine. The point is that they’re small enough to cook through without any extra work, and they’re already seasoned, which means you don’t have to think about it.

Spinach: fresh, not frozen. Fresh baby spinach wilts down into something genuinely beautiful in this dish. Frozen tends to release extra water and can make things soggy. Just roughly chop it, don’t stress about it being perfect.

  • 4 big packed cups of fresh baby spinach, roughly chopped — maybe a little more if you like it

How to Make It

First, preheat your oven to 375°F and grease a 9×13 casserole dish. Nothing fancy. A little cooking spray, a swipe of butter, whatever you have.

Pour the dry pasta straight into the bottom of the dish. I know it feels wrong. Do it anyway.

Pour the sauce over the pasta and use a spoon to push the liquid into all the corners. You want every piece of pasta to have contact with liquid, otherwise you’ll end up with crunchy bits around the edges that didn’t soften all the way.

Tuck the meatballs in. They don’t need to be arranged perfectly — just distribute them so that when you serve it, every portion gets a few.

Pile the spinach on top. All of it. It will look like far too much. It is not too much. It will shrink down to almost nothing once the heat gets to it, and you will be glad you used the whole four cups.
