Ingredient Notes
Use the regular refrigerated crescent roll dough—the tube with 8 crescents inside. Not the sheet dough, unless that is all you can find, but the triangles make this much less fussy. I usually grab Pillsbury because it is what our grocery store carries and because I am not conducting a blind crescent-roll study in my kitchen. We have limits.
For the sauce, choose a thick marinara or pizza sauce. Thin, watery sauce will run out all over the baking sheet, and while I will absolutely scrape up browned cheese, I do not particularly enjoy scraping up tomato puddles. A basic jarred marinara is fine. This is not the moment to open the expensive sauce in a fancy basket with crackers nobody eats.
Boneless, skinless chicken breast is what you need here. Cut it into eight strips, roughly finger-width. They don’t have to be identical—nothing in my house is identical, including the socks—but try to get them close so they cook at the same rate.
And mozzarella: shredded, easy, uncomplicated. I prefer the regular bagged kind here because it melts nicely and stays where you put it better than the very wet fresh mozzarella. I know, I know, fresh mozzarella is lovely. It is also liable to make a damp little mess when you’re trying to roll up crescent dough before lunchtime.
Ingredients
- 1 (8-count) tube refrigerated crescent roll dough
- 1 pound boneless, skinless chicken breast, cut into 8 equal strips—about finger-width, give or take
- 1 cup thick marinara or pizza sauce, the thicker the better for keeping things tucked in
- 1 1/2 cups shredded mozzarella cheese, divided among the bundles (I don’t level off the measuring cup, if we’re being honest)
Instructions
Heat your oven to 375°F. Line 2 baking sheets with parchment paper, or lightly grease them. I prefer parchment because I have spent enough of my life chiseling baked-on cheese off pans. Space in the universe is vast, yet cheese always finds the one spot you forgot to grease.
Pat the chicken breasts dry with paper towels, then cut them into 8 equal strips. Aim for strips about the width of a finger. If one piece is noticeably thicker than the rest, gently pound it a little thinner or slice it down. Don’t skip this part if you can help it—the first time I made these, I had one chunky chicken piece that was still underdone while the others were perfect. Nothing ruins a pleasant meal like having to put one sad bundle back in the oven.
Open the crescent dough tube and separate it into 8 triangles. Lay them out between the two prepared baking sheets, leaving a few inches between each one. They puff up more than you’d think. Crescent dough has ambition.
Spoon about 1 tablespoon marinara onto the wide end of each triangle. Leave about 1/4 inch around the edges so you have a fighting chance of keeping the sauce inside. You will not keep every drop inside. Make peace with that now.
Set one chicken strip on top of the sauce at the wide end of each triangle. Sprinkle roughly 2 tablespoons mozzarella over each piece of chicken. Some cheese may fall onto the dough or pan. Let it. That escaped cheese turns golden and a little crunchy.
Starting at the wide end, roll the dough up and over the chicken. Tuck in the sides as best you can, then set each bundle seam-side down on the baking sheet. “As best you can” is important here. These are bundles, not tiny croissants from a Parisian bakery. If a little sauce peeks out, it will be fine. More than fine, probably.
Bake for 18 to 22 minutes, rotating the baking sheets halfway through if they are on different oven racks. They’re ready when the crescent dough is deep golden brown and the chicken reaches 165°F in the center. I use an instant-read thermometer now because I am older and wiser, or at least more cautious after that one undercooked-chicken incident. Check around the 18-minute mark if your strips were cut thin.
Let the bundles rest for 3 to 5 minutes before serving. I know people will complain. Mine do. But that little rest gives the cheese a chance to settle down so it doesn’t slide out and land in somebody’s lap. Serve warm, with extra warmed marinara on the side if you like dipping. We nearly always do.
Variations
If you have little ones—or grown people with the palate of a little one—use a mild marinara or plain tomato sauce. A smaller amount of sauce inside with more on the side for dipping works well, too.
You can also simply use a smaller spoonful of marinara in each bundle and offer more at the table. That keeps the insides neater, though I hesitate to promise “neat” where crescent dough and melted cheese are involved.
One time I tried packing these much too full of cheese because I was feeling generous, or reckless—same thing in a kitchen—and they split open like overstuffed suitcases. Still delicious. Ugly as sin. So if you want them extra cheesy, press the mozzarella snugly onto the chicken rather than piling it on in a loose mountain.
Storage & Reheating
Leftover bundles keep in the refrigerator for a day or two, covered well. They are not quite as magical the next day, but neither am I, and we carry on.
For reheating, warm them in a 350°F oven or air fryer for a few minutes, until heated through. The oven or air fryer brings back some of that flaky crust; the microwave works in a pinch, but the dough gets soft. Sometimes soft is fine. Sometimes you are eating lunch at your desk while answering an email you should not have answered in the first place.
You can slice leftovers into small pieces and serve them with warm marinara for dipping.
