How to Keep a Casserole Topping Crispy (Not Soggy)

A crispy casserole topping

My green bean casserole looked perfect going into the oven, and came out with a soft, soggy top. My mother told me I added the topping too early.

The Tricks

  • Add the topping near the end. Bake the casserole first, then add crunchy toppings for the last 10 to 15 minutes.
  • Toss crumbs with melted butter. Butter helps crackers and bread crumbs brown and stay crisp.
  • Bake it uncovered for the last part so steam can escape.
  • Use a wide, shallow dish so less steam collects under the topping.

Topping Ideas

  • Crushed buttery crackers
  • French fried onions
  • Panko bread crumbs with butter
  • Crushed potato chips or cornflakes
  • Shredded cheese for a golden crust

Making It Ahead?

Keep the topping in a separate bag and add it when you bake.

Frequently Asked Questions
