My Sister Keeps Her Eggs in the Fridge Door. I Say That Ruins Them. Who’s Right?

My sister has kept her eggs in the little egg tray on the fridge door for thirty years. I keep mine in the carton on a shelf. Every holiday, one of us brings it up.

It seems silly to argue about. But the answer is clear, and it’s not the one the fridge makers would have you believe.

Why the Door Is the Wrong Spot

The fridge door is the warmest part of the refrigerator. Every time it opens, the shelves in the door get a blast of warm kitchen air. The temperature there goes up and down all day.

Eggs keep best at a steady temperature of 40°F or below. Food-safety guidance from the USDA recommends keeping them in the main part of the fridge, not in the door.

Why the Carton Matters

  • It protects the shell. Eggshells are porous. The carton keeps eggs from picking up smells from onions, fish or leftovers.
  • It keeps moisture in, so the eggs don’t dry out as fast.
  • It has the date. The pack date and “best by” date are printed on the carton. An egg tray throws that away.

How Long Eggs Last

  • Raw eggs in the shell, in the fridge: 3 to 5 weeks from the day you buy them.
  • Hard-boiled eggs: about 1 week in the fridge.
  • Never leave refrigerated eggs out for more than 2 hours.

The Float Test

Not sure how old an egg is? Put it in a bowl of water.

  • Sinks and lies flat: fresh.
  • Sinks but stands on one end: older, still fine to cook.
  • Floats: old. Crack it into a separate bowl and check the smell before using, or toss it.

What the Door Is Good For

Use the door for things that hold up to temperature changes: condiments, pickles, salad dressing, juice and bottled water.
