Ingredient Notes

Chicken breasts work beautifully here because they slice into thin strips and cook quickly. You want boneless, skinless breasts—not tenders, not thighs unless that’s what you have. Thighs are fine, honestly, just slice them thin enough that they cook in the same time. I have made the mistake of leaving big chunky pieces, and then you wind up fishing around the pan for the one suspiciously pink strip while everyone is already warming tortillas. Mildly irritating.

For peppers, I use a mix of red and green like the recipe calls for. The red ones get sweeter, and the green ones have that sharper pepper flavor that keeps the whole thing from tasting too soft and sweet. Yellow or orange peppers are perfectly good, too, if that’s what the produce section has left after somebody has picked through it like they’re selecting diamonds.

A plain yellow or white onion is all you need. I prefer yellow, though I have used white plenty of times and nobody called a meeting about it.

As for seasoning, use a store-bought fajita or taco seasoning blend. Whatever brand you like is fine. I usually grab whichever packet is on sale, though I do think some of the taco seasonings run salty, so taste the cooked filling before adding more.

Instructions

Heat your oven to 400°F. Line a large rimmed sheet pan with aluminum foil. I do this every single time because I am not interested in scrubbing baked-on onion bits after dinner. If you have cooking spray around, a light spritz on the foil can help prevent sticking, though I’ll admit I forget half the time.

Put the sliced chicken, bell peppers, and onion right on the foil-lined pan. Try to keep the chicken strips reasonably thin and roughly similar in size. They do not have to look like they came from a cooking show. Mine never do. Spread everything out as best you can.

Sprinkle the 3 tablespoons of fajita or taco seasoning over the chicken and vegetables. Then toss it all together with clean hands or tongs until the seasoning is coating everything. I use my hands because it’s faster, then immediately regret touching raw chicken and have to wash my hands up to the elbows like a surgeon. Tongs are probably more civilized.

Spread the mixture back into one even layer. This part matters more than you’d think. If the chicken and vegetables are heaped in the middle, they steam instead of roast, and you’ll get a soft, damp little pile. Not tragic, but not what we’re after. Give them some breathing room.

Bake for 18 to 22 minutes, stirring everything once halfway through. The chicken should be cooked through with no pink in the center, and the peppers and onions should be tender with some lightly charred edges. My oven runs a little hot—every oven I’ve owned has had some personality disorder—so I start checking at 18 minutes.

If you want more browning, switch the oven to broil for 2 to 3 minutes at the end. Stay nearby. Do not decide this is the ideal moment to fold laundry or see what happened on that detective show. Broilers turn from “nice little char” to “why does the kitchen smell like regret?” in a hurry.

Taste a piece and add a little extra seasoning if you want a stronger fajita flavor. Serve hot in warm flour or corn tortillas, with cheese, salsa, sour cream, or lime if you have it. Or don’t. A fork and a paper plate are also valid for dinner.

Variations

If your family likes heat, use a spicy fajita or taco seasoning, or add a pinch of crushed red pepper flakes when you toss everything together. I usually keep mine mild because anything beyond black pepper can be “too spicy.” Then I put hot sauce on the table and let everybody sort out their own life.

Chicken thighs stay juicier sometimes. They’re not wrong, though I still reach for breasts most often because that’s what I tend to have in the freezer. Slice the thighs thinly and they’ll work in the same baking time.

For a lighter dinner, pile the hot fajita mixture over chopped romaine or mixed greens. It sounds a little sad when you say it out loud, but it’s actually very good—especially with salsa and a little sour cream. It’s especially good when nobody wants a hot tortilla anywhere near them.

I tried adding mushrooms once, thinking I was being clever and economical. They released enough water to turn the pan into a small weather system. Not awful, just not my favorite. Keep it to chicken, peppers, onions, and seasoning if you want the best roasted edges.

Storage & Reheating

Leftover chicken fajita filling keeps well in a covered container in the refrigerator for a few days. I usually pack it with rice or quinoa for lunch, if nobody gets to it first. It’s also terrific spooned over lettuce the next day, or scattered over tortilla chips for quick nachos.

For reheating, a skillet is best if you have the patience; it warms everything through and brings back a little of that roasted flavor. The microwave works, too. I’m not going to pretend I’ve never stood at the counter eating microwaved fajitas straight from a container while looking for my reading glasses. That is a real adult meal, apparently.

If you doubled the recipe, use two sheet pans and rotate them halfway through baking. Don’t crowd one pan just to avoid washing a second one. I understand the urge. I really do. But the vegetables need space or they go limp, and then you’ll be annoyed at the vegetables, which is not a productive use of anybody’s evening.

Final Notes

Some recipes are for when you have time to putter around the kitchen with music playing and a glass of wine nearby. This isn’t really that recipe, although nobody’s stopping you from pouring the wine.
