English muffins — Any brand works. I usually grab whatever’s on the shelf. The nooks-and-crannies style ones do something nice where the sauce gets into all the little holes and crisps up slightly at the edges. I’ve tried the thick-cut sourdough ones before and they were fine, maybe a little dense — I think I prefer the regular ones, but I can’t tell you I’ve done a truly rigorous side-by-side comparison.

Marinara — I have a brand I love that I’m not going to name because the last time I mentioned a specific product in a post I got three comments from people saying they couldn’t find it in their state. Just use whatever you like to eat. I will say that a marinara with a lot of extra herbs or vegetable chunks can make the topping harder to spread evenly, so if you’ve got little kids who are picky, plain smooth is the way to go.

Provolone — Mild provolone, not sharp. I tried sharp once and it was overpowering. Mozzarella is a totally acceptable swap and honestly more traditionally pizza-ish. The provolone just melts in a way I find really satisfying — kind of silky rather than stringy.

Let’s Make Them

Preheat your oven to 375°F and line a baking sheet with foil. I know, I know, the foil feels like a step you could skip. You can skip it. But cleanup without it is genuinely unpleasant and I learned that the hard way around the fourth or fifth time I made these.

Brown your ground beef in a skillet over medium heat, breaking it up as you go. I use a wooden spoon and just kind of go at it until there are no pink spots left. Drain the fat — tip the skillet and spoon it out, or use a paper towel if you’re in a hurry. Then stir in your marinara right in the same pan. Let that bubble for a couple of minutes, just until it’s all warmed through and combined. The smell at this point is enough to make everyone in the house suddenly materialize in the kitchen.

Arrange your muffin halves cut side up on the sheet. This is where I usually do the toasting step if I remember to — just three or four minutes in the oven before the toppings go on, which gives the base a little more structure. I forget about half the time and it still turns out fine.

Spoon the beef mixture over each half. Don’t be stingy — load them up. Then lay a half-slice of provolone on top of each one. It doesn’t have to be neat. It never is, for me.

Bake for 10 to 12 minutes. You’re looking for the cheese to be fully melted and starting to bubble, and the muffin edges should look golden and just barely crisp. My oven runs a little hot, so I check at 10. Your oven is your oven.

Serve them warm. That’s it. That’s the whole thing.

Variations Worth Knowing About

If you want to kick up the heat, try adding a pinch of red pepper flakes to the beef while it’s cooking and swapping the marinara for a spicy arrabbiata. A sprinkle of fresh basil on top after they come out of the oven is a nice touch too. Delicious, though technically no longer the four-ingredient version.

I’ve also done these with mozzarella when that’s what I had, and they’re a little stretchier and a lot more kid-friendly if you’ve got young ones. A mild cheddar works in a pinch but gives the whole thing a different flavor — more like a hamburger pizza situation, which isn’t bad, just different.

One thing I wouldn’t recommend: I tried using bagels once instead of English muffins. I don’t know what I was thinking. The ratio was completely off and they took much longer to crisp. Just use English muffins.

Leftovers (If There Are Any)

There usually aren’t, but if you somehow end up with extras, they reheat really well in the toaster oven at around 350° for five or six minutes. The microwave makes the muffin a little soft and sad, so I try to avoid that. I’ve also eaten them cold, straight from the fridge, at eleven in the morning when I was hungry and couldn’t be bothered, and they were perfectly acceptable in that context.

They don’t keep more than a day or two before the muffin starts getting soggy from the sauce. If you want to make them ahead, the beef-and-marinara mixture holds great in the refrigerator for a full day — just assemble and bake when you’re ready. I do that pretty regularly when I know I’m going to be rushing around.

Final Notes

I meant to say earlier — these are also really nice if you set out extra warmed marinara for dipping. I usually just heat up whatever’s left in the jar. It sounds fancier than it is, which is kind of the whole spirit of this recipe, if I’m being honest. They look like you tried a little harder than you did, and on a busy week, that matters more than people like to admit.

Some recipes just stick around. This is one of them.
