Ingredient Notes

Sweet onions are the best choice here. Vidalia onions are lovely if available, but any big sweet onion works. The slices should hold together and become mellow in the oven. Regular yellow onions work in a pinch and are perfectly good—just a little more oniony, naturally.

For bacon, use regular sliced bacon rather than the super-thick-cut kind. Thick bacon can be stubborn about crisping before the onion gets too soft.

Black pepper is the third ingredient and it really does matter. Not a mountain of it—just enough to give the sweet onion and rich bacon a little bite. Freshly ground is nice, but the little canister from the spice rack works too.

  1. Preheat your oven to 400°F and line a baking sheet or shallow baking pan with foil. Foil makes cleanup easier for this particular mess.
  2. Slice the sweet onions into thick rounds, aiming for about 3/4 inch thick so they stay sturdy while they bake. Separate the larger slices into thick rings, or leave the smaller rounds intact. A mix works well, and the loose rings are especially good.
  3. Wrap one slice of bacon snugly around each onion piece and place it seam-side down on the foil-lined pan. If using especially short bacon slices or very thick bacon, secure the ends with toothpicks.
  4. Sprinkle the bacon-wrapped onions lightly with the black pepper. No salt is needed—the bacon has that department covered.
  5. Bake for 25 to 35 minutes, turning them once if needed, until the bacon is browned and crisp around the edges and the onion is soft and tender in the middle. Start checking around 25 minutes because ovens are all a little dramatic in their own ways. The left side may cook faster in some ovens.
  6. Let the bacon onion bakes rest for 5 minutes before moving them to a plate and serving warm. The onions are hot-hot right out of the oven and need a minute to cool.

Variations

If heat is desired, add a pinch of cayenne or smoked paprika over the bacon before baking. It’s not part of the original three-ingredient version, obviously, but it gives them a nice little kick without taking over. Smoked paprika is especially good alongside burgers or barbecue chicken.

A wire rack set over the baking sheet helps the bacon crisp all the way around. That works beautifully, though it means one more thing to wash. Broil them for 1 to 2 minutes at the very end for extra crisp bacon—but close monitoring is essential. Bacon goes from golden to blackened grief faster than seems reasonable.

Turkey bacon produces a softer, floppier texture. Some substitutions are clever. Some are just punishment.

Storage & Reheating

Leftovers keep in a covered container in the refrigerator for about 3 days. Reheat them on a foil-lined baking sheet at 375°F until warmed through and the bacon perks back up, usually 8 to 12 minutes depending on their size.

The microwave will heat them, but the bacon gets soft. Still tastes good, just not quite the same.

Freezing is not recommended. The onions get watery when thawed, and the texture suffers.
