Cabbage: I use whatever green cabbage I can find at the store, small to medium, and I always keep the core attached when I cut it into wedges. That little bit of core is what holds the wedge together through six or seven hours of braising — skip it and you’ll end up with a pot of cabbage shreds, which is fine, but not the same thing. I’ve also made this with Savoy cabbage when I couldn’t find regular, and honestly it was even better — a little softer, a little more delicate flavor.

Chicken thighs: Bone-in, skin-on is the move here. I know some people always pull the skin off before cooking, and I get it, but the skin bastes the meat all day and keeps it from drying out, and the collagen from the bone adds something to the broth you just can’t fake with boneless. If all you have are drumsticks, they’ll work — I’ve done it in a pinch.

Butter: Don’t skip it and don’t cut it down too much. Four tablespoons sounds like a lot, but it’s distributing over a whole pot of vegetables and several pounds of chicken. That butter is what makes the cabbage taste like cabbage, not just wet cabbage. I always use unsalted so I can control the salt level myself.

Broth: Just one cup, and it doesn’t have to be fancy. Store brand low-sodium is what I reach for. The chicken and cabbage will contribute their own liquid as they cook, so you’re really just giving everything a head start.

  • 2 to 2½ pounds bone-in, skin-on chicken thighs (about 4 to 6 thighs)

Instructions

Peel off any rough or sad-looking outer leaves from the cabbage and cut it into 6 to 8 wedges, keeping that little bit of core at the base of each one. Set them aside and don’t fuss too much over making them perfect.

Season the chicken thighs on both sides with a pinch of the salt and some black pepper if you’re using it. Not a lot — you’re not making a dry rub, just giving the chicken a little help so it flavors the cabbage as it braises.

Lay the cabbage wedges in the bottom of a 5- to 6-quart Slow Cooker. It’s okay if they overlap or lean against each other. They need to mostly cover the base.

Tuck the chicken thighs in among and on top of the cabbage, skin side up. You want them nestled down into the wedges so everything is snug. If they’re sitting up too high and the lid won’t close right, press them down a little — the cabbage will compress.

Pour the broth over everything. This goes in the bottom of the pot and will help get the steam going so the cabbage softens early.

Sprinkle the remaining salt over the whole pot. Then dot the butter pieces across the top — just scatter them around so they’ll melt evenly down through everything as it cooks.

Put the lid on and cook on LOW for 6 to 7 hours, or HIGH for 3 to 4 hours. The chicken needs to hit 165°F in the thickest part, and the cabbage should be completely soft at the edges with a little more texture at the core.

Before serving, taste the broth — it will have concentrated and picked up a lot of flavor. Add more salt if it needs it. Spoon some of those buttery juices from the bottom of the pot over the chicken and cabbage before you dish it out.

A note: the cabbage nearest the bottom will be softer and more saturated with broth, and the wedges toward the top will hold together a little better. I always make sure whoever got stuck with the more-done pieces gets extra broth spooned over theirs to compensate. Just something I’ve worked out over time.

Variations & Substitutions

If you want to make this a real one-pot dinner — which, honestly, why not — scatter some small red potatoes or thick chunks of carrot under the cabbage before you put anything else in. They’ll sit in the buttered broth all day and come out soft and completely saturated with flavor. I’ve also added a quartered onion tucked in alongside the cabbage, and that’s a good call if you want a little more depth.

For a slightly smokier version, add half a teaspoon of smoked paprika to the salt and pepper on the chicken. Or lean into whatever herbs you have around — a teaspoon of dried thyme or rubbed sage stirred into the broth goes a long way. And if you want to finish the whole thing with a squeeze of lemon over the top right before you serve it, do it. It cuts through all that richness in the best way.

If you’re trying to lighten it up a bit, you can drop the butter to 2 tablespoons and add an extra splash of broth to compensate. It’ll still be good. Different, but good.

Storage & Reheating

Leftovers keep in the fridge for 3 to 4 days in a sealed container — make sure you get some of that broth in there with the cabbage and chicken, or the cabbage will taste flat the next day. Reheat on the stovetop over medium-low with a splash of extra broth to loosen things up, or in the microwave covered, which works fine even if it’s not glamorous. The cabbage will get a little softer each time you reheat it, but the flavor actually improves. I’ve found that the second-day version is sometimes better than the first, which either says something good about braised cabbage or something slightly embarrassing about my dinner the night I made it.

Final Notes

Serve the chicken and cabbage in shallow bowls so you can get plenty of that broth in each one. Egg noodles or mashed potatoes alongside are the right call — something to soak up the juices. Dinner rolls if you have them. A little dish of pickles on the side is not wrong at all; there’s something about that tangy crunch against the buttered cabbage that just works.

I keep meaning to try this with a half-head of red cabbage mixed in, just to see what happens to the color. I never actually do it because by the time I’m making this I just want dinner, not an experiment. But one of these days.
