For caramel sauce, use a thick, pourable caramel sauce—not the thin kind meant to drizzle over ice cream if you can help it. A thicker sauce gives you that distinct middle layer instead of soaking down into the crust and causing a little caramel swamp. Still tasty, obviously. But messy. I have made the caramel swamp version, and it looked like something made during finger-paint hour.
Chocolate chips are your final layer. Semi-sweet chips are my preference because they keep the bars from becoming tooth-achingly sweet, but milk chocolate chips work if that’s what your family likes. Milk chocolate is especially rich. Well. Yes. That was the assignment.

Preheat your oven to 350°F. Lightly grease or line a rectangular glass baking dish. Press the shortbread cookie dough evenly into the bottom of the dish. Take a minute to get it fairly level, especially in the corners. I used to think “fairly level” was good enough, and then one side of the pan would be thick as a mattress while the other was practically a cracker.
Bake the dough for 15 to 18 minutes, until the edges are lightly golden. You are not looking for dark brown or deeply baked here; the crust will go back in the oven later. Pull it out and let it cool for 5 minutes. Not thirty minutes, not until you remember it an hour later because the dog barked at a delivery truck. Five minutes.
Pour the 1 cup caramel sauce over the warm crust and gently spread it into an even layer. The crust being warm helps everything settle nicely. If your caramel sauce is very thin, you can chill the baked crust for a few minutes first—but don’t turn this into a whole production.
Sprinkle the 1 1/2 cups chocolate chips evenly over the caramel. Return the dish to the oven for 3 to 5 minutes, just until the chips have softened. Watch them toward the end. Chocolate chips often hold their shape even when softened, which is mildly rude if you ask me, so don’t wait for them to look completely melted.
Remove the pan from the oven and spread the softened chocolate into a smooth top layer. An offset spatula is nice, but a regular butter knife works. I have even used the back of a spoon when everything else was in the dishwasher. Let the bars cool completely, then chill them until firm enough to slice. Give them at least 1 hour in the refrigerator for clean cuts.

Variations
I mostly leave these alone because the whole charm is their ridiculous simplicity. Dark chocolate chips give the bars a more grown-up edge and make the caramel taste less sugary. They are also lovely with strawberries on the side, which is pretty and sensible.
A scoop of vanilla ice cream alongside one of these is downright wonderful, especially if the bar has been sitting at cool room temperature for a few minutes. The contrast of cold ice cream and soft caramel is hard to argue with. A cold glass of milk is good too, particularly with dessert.
One time I tried using white chocolate chips. It was not terrible. Let’s be fair. But it was too sweet, and we have eaten frosting off a spoon without shame. Semi-sweet or dark chocolate is the better balance here.
Storage & Reheating
Keep the bars covered in the refrigerator for up to several days. They honestly taste even better the next day, once the caramel, chocolate, and crust have settled into each other a bit. I usually store them right in the baking dish with foil or plastic wrap over the top.
