Save This Recipe
You’re going to love this easy Slow Cooker chicken with its sweet-savory brown sugar sauce and tender, fall-apart texture. Just chicken, Italian dressing mix, and brown sugar cook into a glossy, flavorful dinner with almost no prep. Serve it over rice, mashed potatoes, or noodles to soak up every bit of sauce.
Why You’ll Love It
- Just 3 ingredients — chicken, Italian dressing mix, and brown sugar are all you need.
- No browning required — add everything to the Slow Cooker and let it do the work.
- Sweet-savory flavor — brown sugar and tangy Italian herbs create a rich, sticky sauce.
- Easy to stretch — shred the chicken into the sauce and serve it on buns for extra portions.
Ingredient Notes
You need boneless, skinless chicken breasts here. Choose breasts that are roughly similar in size if you can, so one skinny little piece doesn’t turn into sawdust while the big one is still catching up. I’ve learned that lesson the annoying way.
For the Italian dressing mix, the standard little packet—about 0.7 ounce—is exactly what you want. I usually buy Good Seasons because that is what my grocery store carries and because I am not driving across town to compare dried oregano flakes. Use what you have. Just make sure it’s the dry seasoning packet, not a bottle of prepared Italian dressing. Very different situation.
The brown sugar should be packed, as in pressed down into the measuring cup. Light or dark brown sugar both work, though dark brown sugar gives the sauce a slightly deeper, more molasses-y flavor. I tend to have light brown sugar around, except when I need it, which is apparently how pantry items operate.
Nonstick spray is optional, but I do use it. The sauce can get sticky around the edges, and I’ve got enough going on without soaking a crock for half the night. To each her own.
Ingredients
- 4 boneless, skinless chicken breasts, about the same size if you can manage it
- 1 packet Italian dressing mix, about 0.7 ounce—the dry kind, not the bottled dressing
- 1 cup packed brown sugar, light or dark, whatever is in the cupboard
- Nonstick cooking spray, optional, but I use it because I wasn’t born yesterday
Instructions
Lightly coat the inside of your Slow Cooker with nonstick spray if you’d like easier cleanup, then arrange the 4 chicken breasts in the bottom in as close to a single layer as possible. They can overlap a tiny bit if your cooker is on the smaller side, but don’t pile them up like laundry.
Sprinkle the Italian dressing mix evenly over the chicken breasts. Try to get a little on each one, though I’m not standing there with a ruler. This recipe is forgiving.
Pack the brown sugar over the top of the seasoned chicken, covering it as evenly as you can. It will look like an unreasonable amount at first. That is normal. Don’t add water, broth, butter, or anything else—the chicken releases juices as it cooks, and the brown sugar melts down into that lovely sticky sauce all on its own.
Cover and cook on low for 4 to 5 hours or on high for 2 1/2 to 3 hours, until the chicken is tender and cooked through and the brown sugar has melted into a glossy sauce. Start checking at the early end of the time range, especially if your chicken breasts are small. Spoon the sauce over the chicken before serving, and use a wide spatula or tongs to lift it out carefully because it gets very soft and can fall apart a little. Not a tragedy—just call it rustic.
Variations
If your family prefers dark meat, boneless skinless chicken thighs work beautifully here. They stay especially juicy in the Slow Cooker and have a richer flavor, though I’ll admit I usually make it with breasts because that’s what I seem to buy on autopilot. Thighs may need the same general cooking window, but keep an eye on them anyway. Every Slow Cooker has its own personality, and some of them are a little too enthusiastic.
A sprinkle of chopped parsley at the table makes the plate look fresher if you care about that sort of thing. I care sometimes. Other times I put green beans beside it and figure the color situation has been handled.
One thing I would not do is add extra brown sugar. I know, I know—it sounds tempting if you like a sweeter glaze, but one cup is plenty. I made it once with more because the bag was nearly empty and I was trying to avoid having a sad little half-cup left. The sauce got thick and overly sweet, and nobody said much at dinner, which in my house is how you know I missed the mark.
Storage & Reheating
Leftover chicken keeps well in a covered container in the refrigerator for up to 3 or 4 days. Make sure to spoon plenty of the sauce over it before storing, because that helps keep the meat from drying out.
For reheating, I warm it gently in the microwave with a spoonful of sauce over the top. Cover it loosely so it doesn’t splatter all over the microwave, because brown sugar sauce turns into concrete once it dries. Ask me how I know. Actually, don’t—there are still suspicious spots in the microwave vent.
You can also reheat it in a small covered skillet over low heat with the sauce, just until warm. Don’t cook it again to death. Chicken breasts are not improved by being punished.
The shredded leftovers are particularly good on buns the next day, or tucked into a baked potato with a little sauce spooned over.
Final Notes
This is not a polished dinner-party recipe, unless your dinner party is the kind where people show up in socks. Which, frankly, sounds better than most dinner parties I’ve been to.
It’s just a good supper. Sweet, sticky chicken; a warm kitchen; something bubbling away while you fold towels or ignore the towels and sit down for five minutes with coffee that has gone cold. The slow cooker does the heavy lifting, and you get to take credit for dinner. Fair trade.
I still think of those old practical recipes sometimes—the ones built from whatever was on hand, without a whole production around them. There’s something comforting about that. Maybe it’s nostalgia. Maybe it’s just decision fatigue.
Either way, spoon extra sauce over the chicken. Don’t be stingy with it.
