Ingredient Notes
For the chicken, use raw bone-in chicken thighs. The bones help keep the meat moist through the longer slow-cooker time, and the skin and bones add a little richness to the sauce. You can remove the skin after cooking if that’s your preference, but I usually leave things alone until they hit the plate. I am not running a restaurant here.
A large red onion is what you want. Slice it into reasonably thin slices—not tissue-paper thin, just enough that it can soften down nicely. Red onions get sweet and mellow as they cook. Yellow onions work too, but I like the red onion here. It feels a little prettier, even though it ends up looking like it has been through some hard times by dinnertime.
For barbecue sauce, use a sauce you already like. That is my most practical cooking advice, and it has saved more dinners than any fancy trick. A smoky sauce is wonderful, a classic sweet sauce is great, and honey barbecue sauce makes this especially kid-friendly. I tend toward Sweet Baby Ray’s because it’s what everyone expects, though there are fancier sauces out there if that’s your thing. We are not fancy.

Instructions
Spread the sliced red onion evenly across the bottom of your slow cooker. Don’t fuss over making a perfect little onion bed; just get it mostly covered. The onions keep the chicken from sitting directly on the bottom and they soften into the sauce while everything cooks.
Place the 6 raw bone-in chicken thighs over the onions in as close to a single layer as you can manage. Mine never fit like the picture in my head, which is fine. Tuck them in side by side, overlap just a little if needed, and wash your hands well afterward because raw chicken is not where we get casual.
Pour the 1 1/2 cups barbecue sauce over the chicken thighs, covering the tops as evenly as possible. It may look like not quite enough sauce at first, but don’t add water or broth. The chicken releases plenty of juices as it cooks, and you’ll have more sauce than you think by the end.
Cover the slow cooker and cook on LOW for 6 to 7 hours, or on HIGH for 3 1/2 to 4 1/2 hours, until the chicken is cooked through and very tender. Try not to lift the lid every half hour to peek—I know, I know. Every time you lift it, heat escapes and the cooking time stretches out. Slow cookers are touchy little things that way.
Carefully spoon some of the sauce and softened red onions over the chicken before serving. The thighs will be tender enough that they can start coming apart when you move them, so a large spoon or tongs with a little patience helps. Serve with mashed potatoes, buttered rice, egg noodles, green beans, broccoli, corn, or a simple salad. Or just rolls and a vegetable, if that’s the kind of evening it is.
Variations
Honey barbecue sauce gives the whole thing a sweeter edge and makes those cooked onions almost like onion jam. It is especially good over mashed potatoes.
If onions are not your thing, slide the onion slices well underneath the chicken before cooking. They soften so much that a lot of them practically disappear into the sauce. You can leave the more obvious pieces in the slow cooker when serving and spoon extra sauce over the chicken. This is not deception. This is management.
If you’re willing to wander beyond the official three ingredients, a little garlic powder, black pepper, or smoked paprika can be nice. A small splash of apple cider vinegar can wake up a very sweet barbecue sauce, too. Go easy with it.
I have also tried this with boneless thighs, and it was perfectly edible, but I didn’t love it as much. They cooked faster and didn’t have quite the same rich, tender texture. So maybe it worked. It didn’t work for me. Both can be true, apparently.
Storage & Reheating
Leftovers keep well in a covered container in the refrigerator for a few days. I usually pull the chicken from the bones before storing it because nobody wants to deal with that when they’re hungry. Save every bit of the sauce and onions with it—that’s where the good stuff is.
Reheat the chicken gently in the microwave with a spoonful of sauce over top, or warm it in a covered skillet over low heat until hot. If it seems thick after chilling, a little extra barbecue sauce brings it back around nicely.
The leftover chicken is especially good piled onto buns, tucked into wraps, or spooned over baked potatoes. It is also great on baked potatoes with a little shredded cheese.
Final Notes
There’s something comforting about a meal that doesn’t ask much of you. Maybe that sounds lazy, but I don’t think it is. Some days call for chopping and simmering and tasting as you go, the whole kitchen smelling like you have your life very much together. Other days, you need to put chicken, onion, and barbecue sauce in a crock and let the appliance carry some of the load.
And maybe that’s why I keep coming back to this one. The smell fills the kitchen, the chicken turns tender, and the sauce gets soaked up with potatoes.
Dinner wasn’t perfect. It rarely is. But the chicken was tender, the sauce got soaked up with potatoes, and for twenty minutes or so everything sat still.
That counts for plenty.
