Ingredient Notes

Chicken thighs are the right choice here, in my opinion. Bone-in and skin-on thighs stay juicy during the covered bake and the extra time without the foil. The skin gets soft under the sauce at first, then develops those darker, sticky spots toward the end. Not crispy-crispy, no. This isn’t that sort of chicken. It is saucy, tender, old-fashioned chicken, and it knows what it is.

For the onion, use one large sweet onion and slice it into rings. Vidalia is lovely if you can get one, but any good sweet onion works. I have used a plain yellow onion when that was all I had, despite claiming earlier that it “just isn’t the same.” It was fine. More than fine, actually. I hate when that happens.

Russian dressing is the whole flavor engine here, so use one you enjoy. The familiar bottled kind is exactly what this recipe was built for. It has that tangy, slightly sweet, tomatoey flavor that turns into a wonderful pan sauce in the oven. Don’t substitute ranch or Italian dressing and expect Chicken Charleston. You may get something edible, but it will be a different rodeo.

Russian dressing and Thousand Island are not identical. Close cousins, maybe. Leave it at that.

  • 6 bone-in, skin-on chicken thighs
  • 1 large sweet onion, sliced into rings
  • 1 cup Russian dressing, the regular bottled kind—I don’t fuss with homemade here

Instructions

Preheat your oven to 350°F and lightly grease an oval baking dish or a 9×13-inch casserole dish. I usually use my old cream-colored stoneware dish.

Arrange the sweet onion rings across the bottom of the baking dish. Spread them around fairly evenly, but do not stand there trying to make a perfect onion mosaic. They are going to soften and slump together anyway, as onions do.

Place the 6 chicken thighs on top of the onion rings in a single layer. Skin side up is how I do it, though the dressing will cover most of that skin at first. Try not to stack the chicken; it needs room to cook evenly, and crowded chicken has a way of looking pale and sad.

Spoon the 1 cup of Russian dressing evenly over the chicken thighs, making sure each piece gets a good coating. It may seem like a lot when you first pour it on, but it melts into the onions and chicken juices as it bakes. This is not the moment to get stingy.

Cover the dish tightly with foil and bake for 45 minutes. Tightly matters because that trapped steam helps the chicken stay tender and gets those onions going. I have forgotten the foil once—only once—and the top dried out before the onions had a chance to do their thing. Learn from my foolishness.

Remove the foil after 45 minutes, and carefully spoon some of the pan sauce over the chicken. The dish will be hot and steamy, obviously, but I still somehow manage to act surprised every time. Return it to the oven uncovered and bake for another 25 to 35 minutes, until the chicken is cooked through and the onions are very soft and caramelized around the edges.

Let the Chicken Charleston rest for 5 minutes before serving. Spoon plenty of the onions and sauce over each piece of chicken. Serve it with white rice, buttered noodles, mashed potatoes, green beans, steamed broccoli, or a plain crisp salad if you feel the need to act sensible. Rice catches every last bit of sauce.

Variations

This can be made with chicken breasts if preferred. Bone-in or boneless breasts can work, though you have to watch them more closely because they dry out sooner than thighs. The timing can be a little different depending on their size, so don’t wander off to watch two episodes of something and assume dinner will wait patiently for you. It will not.

If you want a little extra something, a light sprinkle of black pepper, garlic powder, or paprika is fine. I generally leave it alone because the dressing already has plenty going on, but you do you.

Adding bell peppers can make the sauce thinner because they release water. Not every leftover vegetable needs a role in dinner. Some of them can just become an omelet.

If your Russian dressing is especially thick, you can stir in a tablespoon or two of water before spooning it over the chicken. I don’t usually bother, but some brands are thicker than others, and it does help the dressing spread more easily.

Storage & Reheating

Leftovers keep well in the refrigerator for about 3 to 4 days, covered tightly. Put the chicken and all that lovely sauce in a container together—do not leave the onions behind in the baking dish like they are an afterthought. The onions might be the best part, honestly.

To reheat, I prefer the oven in a covered dish at 350°F until warmed through. It takes a little while, maybe 20 minutes or so depending on how much you are heating, but the chicken stays nicer that way. The microwave works for a quick lunch, of course. Cover it loosely so the sauce doesn’t decorate the inside of your microwave, which mine currently does in several shades of red and orange. I keep meaning to scrub it properly.

Cold Chicken Charleston is also oddly good straight from the refrigerator, standing at the counter in socks while you wait for coffee. I’m not saying that is a recommended serving method. I’m saying life is long and leftovers are not always reheated with dignity.
