Set out your Slow Cooker and tear off 4 large sheets of heavy-duty aluminum foil, each about 12 to 14 inches long. If your foil seems flimsy, double it up for each packet. Do not skip that if you can help it; buttery steak juice escaping into the bottom of the cooker is not tragic, but it does defeat the tidy little-packet idea.

Pat the steak strips dry with paper towels, then put them in a large bowl. This takes an extra minute, but dry meat holds onto seasoning better.

Sprinkle the 3 tablespoons of Cajun seasoning over the steak and toss everything together with clean hands or tongs until the strips are coated all over. If you have 10 to 15 minutes to let it sit, go ahead and do that. If time is short, just keep moving. It will be fine.

Lay the foil sheets flat on the counter and divide the seasoned steak evenly among them, piling each portion right in the center. Leave room around the edges because you need enough foil to make a proper seal—not a little open canoe situation.

Cover the slow cooker and cook on LOW for 4 to 6 hours or on HIGH for 2 to 3 hours. Sirloin usually lands on the shorter end, while round steak needs more time to relax and get tender. Resist lifting the lid every half hour—slow cookers lose heat every time you peek.

Carefully open one packet when you think the steak is ready, keeping your face and hands back from the steam. The steak should be cooked through, easy to cut with a fork, and reach at least 145°F internally. If it needs more time, seal it back up as best you can and cook another 30 minutes before checking again.

Variations

To keep this truly a three-ingredient recipe, don’t start tossing vegetables or onions into the packets. Onions would be good. Peppers would be good. A whole lot of things would be good with butter and Cajun seasoning. But sometimes the beauty is that dinner is already handled.

Let leftover steak cool, then remove it from the foil packets and refrigerate it in shallow containers within 2 hours. Pour every last bit of the buttery juice over the steak before storing it—that keeps it from drying out and makes lunch the next day considerably less depressing.
