These pizza rolls taste like pizza night, but without the whole production of dough rising, sauce splattering on the stovetop, and someone complaining that the toppings are touching. Warm, flaky crescent dough around pepperoni and stretchy mozzarella… they’re simple, yes, but not in a sad way. And they disappear fast, so maybe make two batches.

Ingredient Notes

Use the regular refrigerated crescent roll dough that comes in the tube—an 8-count tube. Any familiar grocery-store brand is fine. I’m not precious about it. Just make sure you get the kind that separates into triangles, not the dough sheet, unless you’re in the mood to cut triangles yourself, and I generally am not.

For the pepperoni, regular sliced pepperoni works best. The little tiny pepperoni rounds are cute, but they don’t cover the dough as neatly and tend to wander around when you roll everything up. Four slices per roll sounds like a lot until you see how much dough there is. It’s pizza, not a wellness retreat.

Mozzarella string cheese is the easiest choice here because it is already shaped exactly the way you need it. Cut each stick in half, and you’re done. Block mozzarella can work if that’s what you have, but cut it into little sticks rather than cubes. Cubes are troublemakers. They shift, they poke holes, they leak everywhere.

I serve marinara or pizza sauce on the side when I have it. Do not put sauce inside the rolls. I know it seems sensible. It is not. I tried it once and got gummy dough, split seams, and a baking sheet that looked like a small tomato-related disaster. Sauce on the side. We can all live happily that way.

  • 1 tube refrigerated crescent roll dough (8-count)
  • 32 slices pepperoni
  • 4 mozzarella cheese sticks, each cut in half

Instructions

Preheat your oven to 375°F. Line a baking sheet or pizza pan with parchment paper, or lightly grease it if parchment has mysteriously disappeared from your drawer again. Mine vanishes along with good scissors and every decent pen in the house.

Unroll the crescent dough and gently separate it into 8 triangles. If one tears a little, don’t panic. Press it back together with your fingers. Crescent dough is surprisingly cooperative.

Lay 4 slices of pepperoni across the wide end of each dough triangle. Keep them mostly centered so you have room to tuck the dough around the filling later. I overlap the slices just a little, but there is no need to make this look like a food magazine photo. Nobody is grading you.

Place 1 piece of mozzarella cheese on top of the pepperoni at the wide end of each triangle. Try to keep the cheese away from the edges; that little bit of restraint helps prevent it from oozing out all over the pan. Though, again, a little ooze is honestly delicious.

Roll each triangle up starting at the wide end and moving toward the pointed tip. As you roll, tuck the sides in slightly around the cheese. Not tightly enough to squash the dough, just enough to give it a little jacket.

Arrange the rolls seam-side down on the prepared baking sheet, leaving a little space between them. They puff up more than you’d think. The first time I made these, I lined them up practically shoulder-to-shoulder and wound up with one large, very tasty crescent creature.

Bake for 11 to 14 minutes, until the rolls are puffed and deeply golden brown and the cheese inside has melted. Start checking at 11 minutes, especially if your oven runs hot. Mine has been “a little quirky” since we moved in, which is realtor language for it has moods.

Let the pizza rolls cool for 3 to 5 minutes before serving. I know, I know. Everybody will want one immediately. But molten mozzarella has no mercy, and I’d rather not have anyone hopping around the kitchen fanning their mouth like they’ve made a terrible life choice.

Variations

If you want to change things up, turkey pepperoni works nicely in place of regular pepperoni. It has a little less richness, obviously.

Fully cooked crumbled sausage can also replace the pepperoni. It makes the rolls a little heartier, though it’s more fiddly to keep the filling tucked in. A light sprinkle of Italian seasoning over the pepperoni before rolling adds that pizza-shop smell.

I did once try adding chopped vegetables inside these because I was feeling responsible and optimistic. That version did not go over particularly well. The peppers released moisture, the dough got soft in spots, and the filling was not a hit. Fair criticism, frankly.

Storage & Reheating

These are best warm from the oven, when the crescent dough is crisp at the edges and the cheese still pulls apart in those long, dramatic strings. But leftovers keep just fine in an airtight container in the refrigerator for a couple of days.

To reheat them, use a toaster oven or regular oven at 325°F for a few minutes, just until warmed through and crisp again. I usually put them directly on a small baking sheet. The microwave will heat them, sure, but it softens the pastry. Sometimes that’s all you have time for, and I am not here to shame anyone with a microwave. Still, the oven is better.

One afternoon I found two leftover rolls tucked behind a container of grapes, and I reheated them for lunch while watching one of those home renovation shows where everybody says “open concept” every twelve seconds. They were still good. Not fresh-from-the-oven good, but good enough to make lunch feel less like a chore.

Final Notes

There are recipes that become part of your life because they are impressive, and there are recipes that stay because they show up when you need them. These are the second kind.

I’ve made them on busy afternoons and for family movie nights.

The funny thing is, I nearly forget about these sometimes. Then I buy crescent dough for something else, spot the pepperoni in the refrigerator, and there we go again—eight little pizza rolls on a pan, the kitchen smelling like buttery dough and melted cheese, somebody wandering in to ask what’s cooking.
