The baked beans matter more than you might think here. Use two 28-ounce cans of baked beans in tomato sauce—the regular, familiar kind. They bring the sweet tomato base, tender beans, and that little bit of brown-sugary comfort already built in. I generally grab whatever brand is on sale, although I do lean toward the less aggressively sweet ones when I know I’m using a sweet barbecue sauce.

For the barbecue sauce, use one you already like on chicken. A regular or smoky sauce is especially good. If your family likes a little heat, a spicy barbecue sauce works nicely too. Just remember that baked beans can be sweet on their own, so I would not pair very sweet beans with an extremely honey-heavy sauce unless you’re aiming for that flavor. Some people are. No judgment. Well, very little.

Boneless, skinless chicken breasts are the base of this recipe, and you’ll need about four large ones to make 2 pounds. Make sure they are fully thawed before they go in the Slow Cooker. I know somebody, somewhere, is going to ask about frozen chicken. Please don’t. Slow cookers are wonderful, but they are not magic boxes that repeal food-safety rules.

The sliced yellow onion goes on the bottom and becomes soft and mild under all that sauce. Even people who claim they “don’t do onions” usually don’t fuss over it here.

  • A little oil or nonstick cooking spray, for greasing the slow cooker
  • 1 medium yellow onion, thinly sliced
  • 2 pounds boneless, skinless chicken breasts, about 4 large pieces
  • 2 (28-ounce) cans baked beans in tomato sauce
  • 1 cup barbecue sauce, your favorite regular or smoky kind
  • Pinch of salt or black pepper, optional at the end—I taste before adding anything because the beans and sauce have plenty going on already

Instructions

Lightly grease the inside of a 5- to 6-quart slow cooker with a little oil or nonstick spray. You can skip this if you’re feeling rebellious, but cleanup is much kinder when you do it. Baked bean sauce has a way of welding itself to the crock by morning.

Spread the thinly sliced yellow onion evenly across the bottom of the slow cooker. Think of it as a little onion mattress for the chicken—less glamorous than it sounds, but effective.

Lay the fully thawed chicken breasts over the onions in a single layer. If they overlap a bit, don’t worry yourself sick over it. Mine nearly always do, because apparently chicken breasts come in every size except the one that fits neatly in my slow cooker.

In a medium bowl, stir together both cans of baked beans and the 1 cup of barbecue sauce until the mixture is thick, glossy, and fairly well combined. It may look like an awful lot of sauce at first, but it settles down as it cooks and becomes exactly what you want spooned over potatoes.

Pour the bean and barbecue sauce mixture evenly over the chicken, making sure the chicken is nestled down into the beans and sauce as best you can. Put the lid on and leave it alone. This is not a recipe that benefits from checking every twenty minutes, no matter how often you walk through the kitchen.

Cook on LOW for 6 to 8 hours, which is my preferred method for very tender chicken and properly melded flavor, or cook on HIGH for 3 to 4 hours if the day has gotten away from you. The chicken should reach at least 165°F in the thickest part. I use an instant-read thermometer because I have learned the hard way that “it looks done” is not a cooking method.

Taste the beans and sauce once the chicken is cooked, then add a pinch of salt or pepper only if it needs it. You may not need either one, especially with a bold barbecue sauce.

Serve the chicken breasts whole with plenty of beans and sauce spooned over the top, or gently shred the chicken right in the slow cooker with two forks and stir it into the beans for a more scoopable, stew-like dinner. Both are good. I prefer shredded one day and whole the next, so apparently I contain multitudes.

Variations

If you like a sweeter, more old-school flavor, use a honey or brown sugar barbecue sauce. For a tangier result, choose a sauce with more vinegar or a little smoky bite—especially if your canned baked beans are on the sweet side.

You can make this with boneless, skinless chicken thighs instead of breasts. Thighs stay especially moist, and they’re a little more forgiving if dinner ends up sitting on warm.

You can also stir in a handful of cooked, crumbled bacon right before serving if you want a little extra something. It does make the dish a five-ingredient meal, technically, but I am not the ingredient police. I tried adding bacon at the beginning once, though, and it got soft and sort of lost its point. Save it for the end if you use it.

A version with an overly spicy barbecue sauce did not go over well. The leftovers sat there glaring at us for three days.

Storage & Reheating

If you’re serving this over a long evening, keep the slow cooker on WARM and keep the lid on as much as possible. Every time the lid is lifted “just to smell it,” heat escapes.

Cool leftovers promptly and get them into shallow containers within 2 hours. They will keep in the refrigerator for about 3 to 4 days. The shredded version reheats especially well because the chicken is already mixed into the beans and sauce.

For reheating, warm it gently on the stovetop over low heat, stirring now and then, or microwave a portion until hot all the way through. You may want a splash of water only if the sauce has thickened up considerably in the fridge, though usually it loosens right back up as it heats. I think it tastes even better the next day, which is probably because I’m not trying to serve it while answering three questions and locating a missing phone charger.

Final Notes

There is something deeply comforting about a meal like this. Not fancy comfort—nobody is putting it on a white plate with a parsley sprig and charging twenty-eight dollars—but the kind that fills the kitchen with a smell that makes home feel occupied and alive.

We ate it with mashed potatoes and a bagged salad. Nobody complained. In this house, that is close to a standing ovation.

Maybe serve pickles alongside, maybe green beans, maybe nothing but cornbread and a big spoon. There are days for complicated cooking, I suppose. Then there are days for chicken, beans, onions, barbecue sauce, and letting the slow cooker carry the load while you sit down for five minutes.
