Instructions

Preheat the oven to 400°F and line a baking sheet with parchment paper. Do not use a bare pan. The cheese can ooze out in little spots, and parchment saves scraping baked-on cheese.

Put the ground beef in a skillet over medium heat and cook it until it is fully browned, breaking it into small crumbles as it cooks. A wooden spoon or meat chopper works nicely. Drain off any excess grease and let the beef cool for a few minutes. Warm is fine; steaming-hot beef will make the pastry soft and harder to manage.

Unfold the thawed puff pastry on a lightly floured surface and gently roll it only enough to smooth out the seams. Do not make it thin as a cracker. A few light passes is plenty. If it starts sticking to the counter or rolling pin, add only a little flour.

Spread the cooled cooked beef evenly over one half of the puff pastry sheet, leaving the other half empty so it can be folded over. Sprinkle the shredded white cheese over the beef. Keep the filling mostly on that one side rather than piling it in the middle, because overstuffing makes twisting messy. Delicious, yes. Neat, no.

Fold the empty half of the pastry over the beef and cheese filling, then press lightly to help it stay together. It doesn’t need to be sealed like a pie crust. In fact, pressing too hard will squash some of the layers that make puff pastry so good. A gentle hand is better here.

Cut the filled pastry into strips about 1 inch wide. Twist each strip several times, then place the twists on the parchment-lined baking sheet with a little room between them. They puff up more than expected. Not enormously, but enough that crowding them will create one big pastry reunion.

Variations

A small pinch of garlic powder and Italian seasoning can be stirred into the browned beef before filling the pastry. The plain version also works well with a variety of dips.

A little bowl of marinara is wonderful alongside these, especially with that pizza-roll comparison. Ranch is popular too. Spicy mustard is surprisingly good with the beef and cheese.

Chopped peppers can be added, but the extra moisture makes the twists less crisp. Use only peppers that have been cooked down very well.

For smaller twists, or a snack table with paper plates and drinks, cut the strips a little narrower. More twists will result, though they’ll bake in the same general 15-to-20-minute window. Keep an eye on them, as usual.

Storage & Reheating

If there happen to be leftovers, let the twists cool completely and store them in a covered container in the refrigerator. They’re best within a couple of days. By day three, the pastry starts losing that crisp, flaky thing that makes them so good.

To reheat, put them on a baking sheet in a 350°F oven until warmed through and crisp again, usually around 8 to 10 minutes. Skip the microwave unless texture does not matter. It makes the pastry soft, and while soft pastry has its place in this world, this is not it.

The twists can also be eaten cold from the refrigerator, though they are best reheated until crisp again.
