A sweet little taste of summer… even if it’s the middle of February.
You ever just want dessert without having to work for it?
That’s how this cobbler came into my life. It was one of those “what do I have in the pantry” nights — you know the kind. I wasn’t about to go peeling fresh peaches or digging out my mixer. I wanted something warm, sweet, buttery… and done in under an hour.
This recipe came from my aunt, handwritten in that slanted cursive on an old index card with a peach juice stain in the corner. She called it “Lazy Girl Cobbler”, and honestly? That name fits. It’s the easiest dessert in my whole recipe box. No rolling, no layering, no stressing. Just pour, bake, and try not to eat half the pan before anyone else sees it.
Why You’ll Love It (besides the obvious)
-
Five-minute prep. Seriously, the oven takes longer to heat than the batter does to mix.
-
Canned peaches make it simple. No peeling, slicing, or waiting for fruit to ripen.
-
The batter bakes up around the peaches like a soft, buttery blanket.
-
It’s flexible. Add cinnamon, nutmeg, or a scoop of vanilla ice cream — or don’t.
-
Everyone asks for the recipe. But you’ll probably want to keep it “grandma’s secret.”
What You’ll Need
Nothing fancy, nothing hard to find. You probably have most of it already.
-
1 (15-ounce) can sliced peaches – Juice and all. Don’t drain it!
-
½ cup butter – One stick. Salted or unsalted, whatever’s in the fridge.
-
1 cup all-purpose flour
-
1 cup sugar
-
1 cup milk – Whole milk works best, but any kind will do in a pinch.
-
2 teaspoons baking powder
-
Pinch of salt
-
Cinnamon (optional) – I always use it. Just a little sprinkle on top.
Let’s Bake a Cobbler — The Lazy, Lovely Way
Step 1: Preheat and melt that butter
Turn your oven to 350°F. While it’s heating up, stick a 9×9 pan in there with the butter. Let it melt while the oven warms — it’ll coat the bottom of the pan and give you that rich, golden base.
(Don’t walk away for too long — melted butter can brown faster than you think.)
Step 2: Make your batter
In a mixing bowl, stir together the flour, sugar, baking powder, salt, and milk. You don’t need to whisk it to death — just until everything’s combined and mostly smooth. It’ll be pourable but not too thin.
Step 3: Layer it up (but don’t mix!)
Once the butter’s melted, carefully pull the pan out of the oven. Pour your batter right over the butter — don’t stir it. I know it’ll feel a little wrong. Trust the process.
Now spoon those peaches right over the top, juice and all. Scatter them around gently. Again — no mixing. That’s the magic of this cobbler. The batter rises up around the peaches all on its own while it bakes.
Sprinkle with a little cinnamon if you like. I always do. Adds just a whisper of warmth that makes it feel like summer and fall got together for dessert.
Step 4: Bake until golden and irresistible
Slide that pan into the oven and bake for 38–44 minutes. The top should be puffed up and golden brown, with the peach juice bubbling around the edges like it’s trying to escape. That’s when you know it’s good.
Let it cool just a bit before serving. It’s amazing warm with a scoop of vanilla ice cream — or cold the next day straight from the pan. No shame.
A Few Quick Tips
-
Want it more peachy? Use a big 28-ounce can and add an extra spoonful of flour to the batter.
-
Fresh or frozen peaches? Totally works. Just cook them down a little with some sugar and lemon juice first.
-
Make it your own: Add a splash of vanilla to the batter or a pinch of nutmeg with the cinnamon. You can even use other fruit — cherries, blackberries, blueberries. Go wild.
Storing Leftovers (If That Ever Happens)
-
Room Temp: Covered on the counter for a day.
-
Fridge: Lasts up to 4 days. Reheat in the microwave or sneak it cold.
-
Freezer: You can freeze it, but the texture’s best fresh. I’d just make another batch.
Before You Go…
This cobbler isn’t fancy. It won’t win awards. But it will make your kitchen smell like love, and your people ask for seconds. And sometimes, that’s more than enough.
