Ingredient Notes

You need regular frozen ice cream sandwiches—the rectangular kind wrapped individually in paper or plastic. Take the wrappers off while they’re still frozen, because once they start softening, those chocolate cookie edges can get a little sticky. Nothing terrible, just mildly irritating, which is basically my threshold for abandoning a recipe.

Use a jar of hot fudge sauce, about 12 ounces. The thick, rich kind is best here. You don’t need to heat it separately; just spoon it over the sandwiches gently. If your jar has been sitting in a chilly pantry and the sauce is stubborn as a mule, warming the closed jar briefly in warm water can help. Don’t microwave the lid on, obviously. We are making dessert, not testing the fire alarm.

For whipped topping, use an 8-ounce container that has been thawed. I usually buy the regular version because that is what my family expects, but use whatever one you like. It’s one of those ingredients where I truly don’t get precious about brands. Some things are worth fussing over. Whipped topping is not one of them.

Instructions

If you’d like easier serving later, lightly line the slow cooker insert with strips of parchment paper, leaving a little overhang at the sides. This is optional—I skip it half the time because I forget—but it can be handy if you want to lift portions out after freezing. Arrange 6 unwrapped frozen ice cream sandwiches in an even layer across the bottom of the slow cooker.

Spoon about half of the hot fudge sauce over the ice cream sandwiches and spread it gently. You do not need perfection here; the sauce will settle into the little spaces on its own. Dollop half of the thawed whipped topping over the fudge layer and spread it around as best you can. Mine always looks a little lumpy at this stage. It sorts itself out.

Make the second layer with the remaining 6 ice cream sandwiches, then spoon on the rest of the hot fudge sauce and finish with the remaining whipped topping. Try to cover most of the top, but again, nobody is grading this. At least nobody decent is.

Cover the slow cooker and set it on warm for 20 to 30 minutes. Check it at 20 minutes, especially if your slow cooker runs warm—some of them seem to have one setting: volcanic. You want the sandwiches softened and the layers lightly melded together, not fully melted or soupy.

Turn off the slow cooker once the dessert is soft. Serve it right away for a creamy, scoopable dessert, or cover it and place the insert in the freezer for 1 to 2 hours if you prefer a firmer, ice-cream-cake-like texture. If your slow cooker insert is not freezer-safe, transfer the dessert to another freezer-safe container first. Please don’t crack your favorite crock over ice cream sandwiches. That would be a sad little obituary.

Scoop the dessert into bowls and serve while cold. It is wonderful as-is, which is the whole point of this recipe. If you happen to have strawberries or raspberries around, they’re nice alongside it, but the three ingredients above are all you need.

Variations

Mint chocolate ice cream sandwiches work nicely when you can find them. You can also stir a few drops of mint extract into the fudge sauce before layering if you want that cool mint-chocolate thing going on.

Cookies and cream ice cream sandwiches work nicely too. If you’re serving it right away, you can scatter crushed chocolate sandwich cookies over the top just before serving. I did that once for a backyard birthday dinner, and the kids acted like I had invented Oreo crumbs. They had never seen them before, apparently. Miracles happen.

I tried a version with caramel sauce instead of fudge once. It was fine. Fine is not bad, but nobody asked for the recipe, and that tells you what you need to know. The fudge gives it the little bit of chocolatey heft it needs.

Storage & Reheating

Cover leftovers tightly and keep them in the freezer. They’ll be good for several days, though the texture is nicest in the first day or two. After that, the ice cream sandwiches become more blended into the whole dessert—which isn’t wrong, exactly, just less distinct.

There is no reheating, naturally. This is not lasagna. If it freezes too hard, let it sit on the counter for 5 to 10 minutes before scooping. Though I draw the line at freezer-burned Chicken, so apparently I do have standards.

Final Notes

There are desserts you make because you want to show off a little, and I’m not above those. I have spent an entire Saturday making a layer cake with buttercream flowers that looked, if we’re being charitable, like pale cabbages.

But this is not that dessert.

This is the one for late summer, for the night everybody is sticky from the heat and nobody wants another “real” project. It’s for a family dinner where somebody brings extra chairs out onto the patio, or for when your grown kids drop by with no warning and head straight for the freezer like they still live there.

The slow cooker on warm, twelve little ice cream sandwiches lined up in a row—it’s goofy, I know. But there’s something comforting about goofy food. It doesn’t demand much of you. It doesn’t care if the table is cluttered or the kitchen floor needs sweeping or you forgot to buy paper napkins.

Just scoop it out cold, hand people bowls, and let them be happy for a minute. Sometimes that’s plenty.
