thinly sliced and blotted if juicy
Instructions
Wash and dry the tomatoes thoroughly.
Slice the tomatoes into thin rounds.
Blot the tomato slices with paper towels if they are very juicy.
Spread a small amount of softened cream cheese onto each cracker.
Place one tomato slice on top of each cream cheese-topped cracker.
Press gently so the tomato stays in place without pushing out the cream cheese.
Arrange the tomato bites on a platter and serve immediately.
Notes
Assemble just before serving so the crackers stay crisp. Blotting juicy tomatoes helps prevent sogginess.
