Ingredients
  

  • 24 buttery round crackers
  • 4 oz cream cheese softened
  • 2 medium ripe tomatoes thinly sliced and blotted if juicy

Instructions
 

  • Wash and dry the tomatoes thoroughly.
  • Slice the tomatoes into thin rounds.
  • Blot the tomato slices with paper towels if they are very juicy.
  • Spread a small amount of softened cream cheese onto each cracker.
  • Place one tomato slice on top of each cream cheese-topped cracker.
  • Press gently so the tomato stays in place without pushing out the cream cheese.
  • Arrange the tomato bites on a platter and serve immediately.

Notes

Assemble just before serving so the crackers stay crisp. Blotting juicy tomatoes helps prevent sogginess.
