Slow Cooker Apple Cider Pork Roast

Ingredients
  

  • 3 lb pork shoulder roast or pork loin roast
  • 2 cups apple cider
  • 1 medium onion sliced
  • 2 tbsp brown sugar
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme

Instructions
 

  • Lightly grease the inside of a 4-quart or 6-quart slow cooker.
  • Place the sliced onion in the bottom of the slow cooker.
  • Set the pork roast on top of the onions.
  • Pour the apple cider over and around the pork.
  • Sprinkle the brown sugar, salt, black pepper, and dried thyme evenly over the roast.
  • Cover and cook on low for 7–8 hours, or on high for 4–5 hours, until the pork is tender and easy to slice or shred.
  • Spoon the cooking juices over the pork before serving warm.

Notes

Use pork shoulder for shreddable meat or pork loin for neat slices. Add apple slices during the last hour for extra sweetness.
