Ingredients

  • 6 boneless, skinless chicken breasts
  • 6 slices Swiss cheese
  • 1 can (10.5 ounces) condensed cream of chicken soup
  • 1/4 cup milk 2% or whole milk works well
  • 2 cups seasoned herb stuffing mix

Instructions

  • Lightly coat the inside of your slow cooker with cooking spray or rub it with a little butter, then arrange the chicken breasts in an even layer across the bottom.
  • Lay one slice of Swiss cheese over each chicken breast.
  • In a small bowl, stir together the condensed cream of chicken soup and milk until smooth, then spoon the mixture over the cheese and spread it gently so most of the chicken is covered.
  • Sprinkle the seasoned herb stuffing mix evenly over the top without stirring it in.
  • Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the chicken is tender and cooked through.
  • Let the chicken rest in the slow cooker for about 5 minutes, then spoon plenty of the creamy sauce from the bottom over each piece before serving.

Notes

Store leftovers with plenty of sauce in a covered container in the refrigerator for a few days. Reheat individual portions gently in the microwave, covered loosely, until hot throughout, adding a spoonful of sauce before reheating if possible. For larger amounts, warm in a covered baking dish at a moderate oven temperature until heated through.
