Apple Fritter Bites
Ingredients
- Nonstick cooking spray
- 1 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp kosher salt
- 2 tsp ground cinnamon
- 1/4 cup unsalted butter melted
- 1/4 cup granulated sugar
- 1 large egg
- 1/2 tsp vanilla extract
- 1/2 cup unsweetened applesauce
- 1 1/2 cups Honeycrisp or Gala apples finely diced, about 2 medium apples
- 2 cups powdered sugar
- 1/3 cup + 2 tbsp apple cider or apple juice
Instructions
- Preheat oven to 400°F and grease a baking sheet with nonstick cooking spray.
- In a medium bowl, whisk together flour, baking powder, salt, and cinnamon.
- In a large bowl, whisk melted butter and sugar until combined. Add the egg, vanilla, and applesauce, then whisk until smooth.
- Add the dry ingredients to the wet and stir until just combined. Fold in the diced apples gently.
- Drop 1-tablespoon scoops of batter onto the prepared baking sheet, spacing them a few inches apart.
- Bake for 10 minutes. Remove from the oven and turn broiler on high.
- Meanwhile, whisk together powdered sugar and apple cider to make a thin, pourable glaze.
- Brush the warm fritters with some of the glaze. Broil for 2–4 minutes, rotating the pan often, until the glaze bubbles and caramelizes slightly.
- Remove from the oven and brush the remaining glaze over the tops. Let sit for 15 minutes before serving.
