What You’ll Need (and What’s Swappable)

  • Rice — Long grain is best. I’ve used jasmine too and nobody complained.

  • Broth — Chicken is classic. Veggie broth if you’re skipping the meat.

  • Ground beef — Or pork, or both. Turkey works if you season it well.

  • Onion, bell pepper, celery — The “holy trinity” of Louisiana cooking. I’ve swapped red pepper in when that’s what I had.

  • Garlic — Fresh if you can, jarred if you can’t.

  • Spices — Paprika, thyme, cayenne. Don’t skip the cayenne entirely — even a tiny pinch wakes it up.

  • Green onions — For sprinkling at the end.

Step-by-Step Directions

Step 1 – Cook the rice
Rinse the rice under cold water until the water runs clear. This helps keep it from clumping. In a medium saucepan, combine rice and chicken broth. Bring it to a boil, then lower the heat, cover, and let it gently simmer for about 15 minutes, or until tender. Don’t stir too much — just let it do its thing.

Step 2 – Brown the beef
While the rice cooks, heat olive oil in a large skillet over medium heat. Add the ground beef and cook until browned and crumbly, about 5–7 minutes. If there’s excess fat, drain it off so the dish doesn’t get greasy.

Step 3 – Build the flavor base
To the same skillet, add onion, bell pepper, and celery. Cook until softened, about 5 minutes. This is when your kitchen will really start smelling incredible.

Step 4 – Add the seasonings
Stir in garlic, paprika, thyme, cayenne, plus salt and pepper. Cook for another 2 minutes so the spices bloom — this little step makes a big difference in flavor.

Step 5 – Combine and finish
Add the cooked rice to the skillet, stirring well so every grain gets coated in those flavors. Let it cook together for another 5 minutes so the rice absorbs all that goodness. Taste and adjust seasoning if you like. Garnish with green onions before serving.

Little Twists I’ve Tried

  • Jalapeño for more kick.

  • Half beef, half pork for a richer taste.

  • Shrimp tossed in at the end — makes it feel fancy.

  • Plant-based meat for my vegetarian friend (she loved it).

  • Traditional chicken livers (my husband… did not love it).

How to Serve It

Honestly? Just a big bowl and a fork is fine. But it’s great with:

  • A green salad with vinaigrette.

  • Crusty bread.

  • Collard greens or cornbread if you’re feeling Southern.

Leftovers

Keeps in the fridge for 4 days. Splash of broth to reheat on the stove makes it taste fresh again. Freezes fine too — just flatten it in a freezer bag so it thaws faster.

  • While the rice is cooking, heat the olive oil in a large skillet over medium heat. Add the ground beef and cook until browned and crumbly, about 5–7 minutes. Drain any excess fat.
  • Add the onion, bell pepper, and celery to the skillet with the beef. Cook until the vegetables are softened, about 5 minutes.
  • Stir in the garlic, paprika, thyme, cayenne pepper, salt, and pepper. Cook for another 2 minutes until the spices are fragrant.
  • Add the cooked rice to the skillet and stir well to combine all the ingredients. Cook for an additional 5 minutes, allowing the flavors to meld together.
  • Taste and adjust seasoning if necessary. Garnish with sliced green onions before serving.

Notes

For extra depth of flavor, substitute half the ground beef with ground pork or add a splash of Worcestershire sauce while cooking the meat.
