Walnut Cream Pie

Ingredients
  

  • 1 1/2 cups graham cracker crumbs about 1 1/2 sleeves
  • 6 tbsp unsalted butter melted, for crust
  • 2 tbsp granulated sugar for crust
  • 1 cup finely chopped walnuts toasted if desired, for filling
  • 3/4 cup granulated sugar for filling
  • 1/4 cup cornstarch
  • 1/4 tsp salt
  • 2 cups whole milk
  • 3 large egg yolks
  • 2 tbsp unsalted butter for filling
  • 1 tsp vanilla extract for filling
  • 1 cup heavy whipping cream
  • 3 tbsp powdered sugar
  • 1/2 tsp vanilla extract for topping
  • 1/4 cup chopped walnuts for garnish

Instructions
 

  • In a bowl, mix the graham cracker crumbs, melted butter, and granulated sugar until the texture resembles wet sand.
  • Press the crumb mixture firmly into the bottom and up the sides of a 9-inch pie pan.
  • Refrigerate the crust while preparing the filling.
  • In a saucepan, whisk together the granulated sugar, cornstarch, and salt.
  • Slowly pour in the whole milk while whisking constantly.
  • Whisk in the egg yolks until smooth.
  • Place the saucepan over medium heat and cook, stirring constantly, for 6–8 minutes, until the filling thickens and begins to bubble.
  • Remove the saucepan from the heat.
  • Stir in the butter, vanilla extract, and finely chopped walnuts.
  • Pour the warm walnut filling into the chilled graham cracker crust and smooth the top.
  • Let the pie sit at room temperature for 20 minutes.
  • Refrigerate for at least 2 hours, or until fully chilled and set.
  • Beat the heavy whipping cream, powdered sugar, and vanilla extract until soft peaks form.
  • Spread or pipe the whipped cream over the chilled pie.
  • Garnish with chopped walnuts before serving.

Notes

Toasting the walnuts deepens the flavor, but the pie is delicious either way. Chill overnight for the cleanest slices.
