Ingredients
  

  • 2 cans refrigerated cinnamon roll dough 12- to 13-ounce cans, with icing packets saved for later
  • 3 large eggs
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 1/3 cup packed light or dark brown sugar
  • 2 teaspoons pure vanilla extract
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon fine sea salt
  • 2 tablespoons unsalted butter softened, for generously greasing the baking dish
  • 2 to 3 tablespoons colorful sanding sugar or sprinkles optional; preferably purple, green, and gold

Instructions
 

  • Heat the oven to 350°F and generously butter the bottom and sides of a 9x13-inch glass casserole dish.
  • Open both cans of cinnamon rolls, set the icing packets aside, and cut each cinnamon roll into 4 to 6 bite-sized pieces.
  • Scatter the cinnamon roll pieces evenly in the prepared baking dish.
  • In a medium bowl, whisk the eggs until fully combined, then add the whole milk, heavy cream, brown sugar, vanilla, cinnamon, and salt and whisk until smooth and speckled with cinnamon.
  • Slowly pour the custard mixture over the cinnamon roll pieces, trying to cover everything, then gently press down any pieces that rise above the liquid so they are lightly moistened.
  • Let the dish sit on the counter for 10 to 15 minutes so the cinnamon roll pieces can absorb some of the custard.
  • Bake on the center rack for 30 to 40 minutes, until the top is puffed and golden brown and the custard is set in the middle; a knife inserted into the center should come out mostly clean, without wet custard clinging to it.
  • Let the casserole cool for about 10 minutes, then knead the reserved icing packets to soften them, snip a tiny corner off each packet, and drizzle the icing over the warm casserole.
  • If using purple, green, and gold sanding sugar or sprinkles, scatter them over the icing while it is still soft.
  • Serve warm, making sure each portion gets some soft center and some golden edge; fresh berries, citrus segments, coffee, or strong black tea are good alongside.

Notes

Cover leftovers and refrigerate for up to 3 days. Reheat individual portions gently in the microwave, or cover the baking dish and warm it in a low oven until heated through. The casserole firms up in the refrigerator; if the top seems dry after reheating, add a little extra icing or a spoonful of whipped cream.
