Ingredients
  

  • 2 cups granulated sugar
  • 1 cup vegetable oil
  • 3 large eggs
  • 2 cups all-purpose flour spooned and leveled if desired
  • 1 tsp vanilla extract
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 1/2 cups chopped pecans

Instructions
 

  • Preheat the oven to 350°F.
  • Grease a 9x13-inch baking pan or line it with parchment paper.
  • In a large bowl, whisk together the granulated sugar and vegetable oil until smooth and glossy.
  • Add the eggs one at a time, whisking well after each addition.
  • Stir in the vanilla extract.
  • In a separate bowl, stir together the all-purpose flour, salt, and baking soda.
  • Fold the dry ingredients into the wet mixture a little at a time, mixing just until no streaks of flour remain.
  • Gently fold in the chopped pecans.
  • Pour the batter into the prepared pan and spread it evenly.
  • Bake for 30–35 minutes, or until the top is set and a toothpick inserted near the center comes out with moist crumbs.
  • Let the pecanbread cool before slicing into squares.

Notes

Pull it slightly early for a softer, fudgier center, or bake a few minutes longer for a more cake-like texture. Cool fully for cleaner slices.
