Swedish Meatball Noodle Bake

Ingredients
  

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1 large egg, beaten
  • 1/2 onion, grated
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon garlic powder
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon black pepper, freshly ground
  • 2 tablespoons olive oil
  • 1 cup beef broth
  • 1 pint heavy cream
  • 1 tablespoon Worcestershire sauce
  • 2 1/2 cups egg noodles
  • 1 1/2 cups Swiss cheese, grated
  • Kosher salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped, for serving

Instructions
 

  • Preheat oven to 375°F and grease a 9x13-inch baking dish.
  • In a bowl, mix ground beef, breadcrumbs, egg, onion, nutmeg, garlic powder, salt, and pepper. Roll into meatballs (1 1/2 tbsp each).
  • Brown meatballs in olive oil over medium-high heat. Remove and set aside.
  • Cook egg noodles in salted water until 2 minutes shy of al dente. Drain and set aside.
  • In the same skillet, add beef broth, heavy cream, and Worcestershire sauce. Simmer 10 minutes until slightly thickened. Season with salt and pepper.
  • Add cooked noodles to baking dish. Nestle meatballs in the noodles. Pour sauce over and top with grated Swiss cheese.
  • Bake for 20 minutes, until cheese is melted and bubbly. Let rest 5 minutes before serving. Garnish with parsley.

Notes

Try using a blend of pork and beef for extra flavor. You can prep the meatballs a day ahead and refrigerate.
