Sunshine Salad

This Sunshine Salad is a refreshing and creamy fruit salad featuring pineapple, mandarin oranges, and bananas, all coated in a sweet vanilla pudding mix. Perfect for picnics, brunches, or as a light dessert!

Ingredients
  

  • 1 fresh pineapple cored and cut into chunks
  • 1 can mandarin oranges 15 oz, in light syrup
  • 2-3 bananas peeled and sliced
  • 1 box Jell-O sugar-free vanilla instant pudding 4-serving size

Instructions
 

  • Core and cut a fresh pineapple into bite-sized chunks. Transfer the chunks to a large mixing bowl.
  • Open a can of mandarin oranges and pour the entire contents, including the light syrup, into the bowl with the pineapple.
  • Peel and slice 2-3 ripe bananas into rounds. Gently add them to the bowl, being careful to avoid mashing.
  • Sprinkle a packet of Jell-O sugar-free vanilla instant pudding mix over the fruit. Do not add liquid; the moisture from the fruit and syrup will dissolve the mix naturally.
  • Using a large spoon, gently toss the ingredients until the pudding mix is evenly distributed and creates a creamy coating over the fruit.
  • Cover the bowl with plastic wrap or a lid and refrigerate for at least 1 hour to let the flavors meld and the pudding set.
  • Stir the salad before serving and portion it into individual bowls or cups. Serve chilled.

Notes

For added flavor, sprinkle with shredded coconut or chopped nuts before serving. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
