This Sugar Cookie Icing dries shiny and firm on top while staying pleasantly soft when you bite into it. It comes together in about 10 minutes with four basic ingredients, plus optional gel coloring for decorating.
Once the icing has hardened completely on the cookies, stack the cookies in an airtight container with parchment paper between layers if designs are detailed or heavily sprinkled. Store finished iced cookies at room temperature in a sealed container for several days. The icing can also be made up to 2 days ahead and refrigerated in an airtight container; bring it to room temperature, stir, and adjust with a tiny amount of milk or powdered sugar before using. Do not microwave iced sugar cookies.
