Ingredients
  

  • 1 lb ground beef 80/20 lean preferred
  • 1/2 cup breadcrumbs plain or Italian style
  • 1 egg lightly beaten
  • 1/4 cup milk
  • 1/4 cup onion finely chopped
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 oz cheddar cheese cut into 1/2-inch cubes
  • 1/3 cup ketchup
  • 1 tbsp brown sugar
  • 1 tsp Worcestershire sauce

Instructions
 

  • Preheat oven to 375°F (190°C). Lightly grease a muffin tin or line with paper liners.
  • In a large bowl, mix ground beef, breadcrumbs, egg, milk, onion, garlic powder, salt, and pepper until just combined.
  • Scoop a tablespoon of meat mixture into your hand, flatten it slightly, place a cube of cheese in the center, and wrap the meat around it to form a ball.
  • Place each meatball into the muffin tin. In a small bowl, mix ketchup, brown sugar, and Worcestershire sauce to make the glaze.
  • Spoon a bit of glaze over each meatloaf bite. Bake for 20–25 minutes or until fully cooked and glaze is bubbling.
  • Let cool slightly before serving. Enjoy warm or at room temperature.

Notes

You can swap cheddar for mozzarella or pepper jack for a different flavor twist.
