Ingredients
1lbground beef80/20 lean preferred
1/2cupbreadcrumbsplain or Italian style
1egglightly beaten
1/4cupmilk
1/4cuponionfinely chopped
1tspgarlic powder
1tspsalt
1/2tspblack pepper
4ozcheddar cheesecut into 1/2-inch cubes
1/3cupketchup
1tbspbrown sugar
1tspWorcestershire sauce
Instructions
Preheat oven to 375°F (190°C). Lightly grease a muffin tin or line with paper liners.
In a large bowl, mix ground beef, breadcrumbs, egg, milk, onion, garlic powder, salt, and pepper until just combined.
Scoop a tablespoon of meat mixture into your hand, flatten it slightly, place a cube of cheese in the center, and wrap the meat around it to form a ball.
Place each meatball into the muffin tin. In a small bowl, mix ketchup, brown sugar, and Worcestershire sauce to make the glaze.
Spoon a bit of glaze over each meatloaf bite. Bake for 20–25 minutes or until fully cooked and glaze is bubbling.
Let cool slightly before serving. Enjoy warm or at room temperature.
Notes
You can swap cheddar for mozzarella or pepper jack for a different flavor twist.
