Savory baked bars made with chopped spinach, Monterey Jack cheese, eggs, butter, and a simple flour batter. They bake into rich, tender squares that work well as an appetizer, brunch dish, snack, or make-ahead breakfast.

Ingredients
  

  • 12 oz frozen chopped spinach thawed and squeezed very dry
  • 1 cup milk
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1/2 cup butter softened
  • 1 lb Monterey Jack cheese cut into small cubes
  • 2 large eggs

Instructions
 

  • Preheat the oven to 350°F and lightly grease a 9x13-inch baking pan.
  • In a large bowl, beat the softened butter and eggs until combined. The mixture may look slightly curdled.
  • Stir in the milk, flour, baking powder, and salt until a thin, smooth batter forms.
  • Fold in the well-drained spinach and cubed Monterey Jack cheese.
  • Spread the mixture evenly in the prepared baking pan.
  • Bake for 40–45 minutes, until the top is golden, slightly puffed, and beginning to pull away from the edges.
  • Let the bars cool for 10–15 minutes so they firm up.
  • Cut into small squares and serve warm, at room temperature, or chilled.

Notes

Squeeze the spinach as dry as possible to prevent watery bars. These keep well refrigerated and are especially good served cold.
