Ingredients
  

  • 1 cup long-grain white rice rinsed until water runs clear
  • 2 cups chicken broth
  • 2 tablespoons unsalted butter
  • 1 large onion thinly sliced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/4 cup Parmesan cheese grated
  • 2 tablespoons fresh parsley chopped, optional for garnish

Instructions
 

  • Heat olive oil in a large skillet over medium heat. Add sliced onions and cook, stirring occasionally, until caramelized and golden brown, about 20 minutes.
  • While onions are cooking, rinse the rice under cold water until the water runs clear to remove excess starch.
  • In a medium saucepan, bring chicken broth to a boil. Add rice, butter, salt, pepper, and thyme. Stir well.
  • Reduce heat to low, cover, and simmer for 15 minutes, or until the liquid is absorbed and rice is tender.
  • Add caramelized onions to the cooked rice and stir to combine.
  • Stir in grated Parmesan cheese until melted and fully incorporated.
  • Remove from heat and let sit, covered, for 5 minutes to allow the flavors to meld.
  • Fluff with a fork, garnish with fresh parsley if desired, and serve warm.

Notes

This dish pairs beautifully with grilled chicken, smothered pork chops, or even roasted veggies for a meatless supper. For a richer flavor, you can substitute part of the chicken broth with beef broth.
