Ingredients
  

  • 2 cups cooked chicken breast finely chopped or shredded
  • 1 cup mayonnaise plus more if needed
  • 1/2 cup celery finely chopped
  • 24 frozen mini phyllo pastry shells thawed, from two 1.9 oz packages
  • salt and black pepper to taste

Instructions
 

  • Set the frozen mini phyllo shells out to thaw while preparing the filling.
  • Finely chop or shred the cooked chicken breast into small, even pieces.
  • In a bowl, stir together the chicken, mayonnaise, and celery until evenly coated.
  • Season with salt and black pepper to taste.
  • Add a little more mayonnaise if the chicken salad seems dry.
  • For crispier shells, arrange the phyllo shells on a baking sheet and bake at 350°F for 3–5 minutes, until lightly crisp.
  • Let the shells cool completely before filling.
  • Spoon the chicken salad into the phyllo shells, mounding it slightly.
  • Refrigerate the filled pastry cups for at least 30 minutes before serving.

Notes

Toasting the phyllo shells helps them stay crisp longer. Fill shortly before serving for the best texture.
