Ingredients

  • 1 lb pork breakfast sausage mild or hot
  • 2 cups sharp cheddar cheese shredded and packed
  • 2 cups biscuit baking mix Bisquick or similar
  • 1 tbsp milk optional, if mixture is too dry

Instructions

  • Preheat oven to 350°F and line a baking sheet with parchment paper or grease lightly.
  • In a large bowl, combine sausage, cheddar cheese, and biscuit baking mix.
  • Using your hands, knead and mix thoroughly until no dry spots remain and mixture holds together.
  • If mixture seems too dry, add a tablespoon of milk. If too wet, sprinkle in a little extra baking mix.
  • Roll mixture into 1 to 1¼-inch balls and place on prepared baking sheet with slight spacing between each.
  • Bake for 18–22 minutes until golden around the edges and fully cooked through.
  • Cool on the baking sheet for 5 minutes before serving warm.

Notes

Serve with ranch, honey mustard, or spicy mayo for dipping. These freeze and reheat very well.
