Southern 3-Ingredient Cheddar Biscuit Bites are warm, cheesy, and crisp around the edges with just biscuit mix, sharp cheddar, and whole milk. Stir, scoop, and bake these easy bites for a comforting side dish with soup, chili, or dinner.

Ingredients
  

  • 2 cups biscuit baking mix Use any preferred brand.
  • 1 cup shredded sharp cheddar cheese Freshly shredded or bagged.
  • 2/3 cup whole milk
  • a little melted butter Optional, for brushing over the hot tops.

Instructions
 

  • Preheat the oven to 425°F.
  • Lightly grease a cast-iron skillet or a mini muffin pan, leaving a little grease in the corners for crisp edges.
  • Put the biscuit baking mix, shredded sharp cheddar, and whole milk in a medium bowl.
  • Stir the ingredients together just until a soft dough forms; a few rough spots are fine.
  • Drop spoonfuls of dough into the prepared skillet or mini muffin pan, leaving a little space between them because they puff as they bake.
  • Bake for 12 to 15 minutes, until the tops are puffed and golden brown and the cheddar is melted through.
  • Remove the biscuit bites from the oven and serve them warm, brushing the tops with a little melted butter immediately if desired.

Notes

These biscuit bites are best served warm. Cool leftovers and store them in a covered container in the refrigerator for up to a couple of days. Reheat in a 325°F oven for about 5 minutes, or until heated through. The microwave will soften the outside.
