Smoked Sausage and Potato Skillet

A hearty one-pan skillet meal made with browned smoked sausage, tender baby potatoes, onion, bell pepper, garlic, and smoky seasoning. This easy comfort dish works well for breakfast, dinner, or a simple weeknight meal.

Ingredients
  

  • 1 lb smoked sausage sliced into 1/2-inch rounds
  • 1 lb baby potatoes halved or quartered
  • 1 small onion chopped
  • 1 bell pepper chopped
  • 2 cloves garlic minced
  • 2 tbsp olive oil divided
  • 1/2 tsp smoked paprika
  • 1/2 tsp dried thyme
  • salt and black pepper to taste
  • 2 tbsp fresh parsley chopped

Instructions
 

  • Wash the baby potatoes and halve them, quartering any larger potatoes.
  • Optional: Parboil the potatoes for 5 minutes, then drain, to shorten the skillet cooking time.
  • Heat 1 tablespoon olive oil in a large skillet over medium heat.
  • Add the sliced smoked sausage and cook for 4–5 minutes, until browned. Remove from the skillet and set aside.
  • Add the remaining 1 tablespoon olive oil to the same skillet.
  • Add the chopped onion and bell pepper, then cook for 3–4 minutes, until softened.
  • Stir in the garlic, smoked paprika, and dried thyme. Cook for 1 minute.
  • Add the potatoes and toss to coat them in the oil and seasonings.
  • Cover the skillet and cook over medium heat for 15–20 minutes, stirring occasionally, until the potatoes are tender.
  • Season with salt and black pepper to taste.
  • Return the browned sausage to the skillet and stir everything together.
  • Cook for 2–3 minutes, until the sausage is heated through.
  • Sprinkle with fresh parsley and serve warm.

Notes

Parboiling the potatoes makes the dish cook faster and more evenly. Serve with eggs for breakfast or a green salad for dinner.
