This hearty and comforting soup delivers all the savory flavors of classic cabbage rolls without the fuss of stuffing. Made in the slow cooker with ground beef, tender cabbage, tomatoes, and rice, it’s a warm and filling meal perfect for chilly days or easy weeknight dinners.
In a skillet over medium heat, brown the ground beef with the diced onion until no longer pink. Drain excess fat if needed.
Add the minced garlic and cook for another minute until fragrant.
Transfer the beef mixture to a slow cooker. Add chopped cabbage, diced tomatoes with juice, tomato sauce, beef broth, uncooked rice, paprika, salt, and black pepper.
Stir everything to combine well.
Cover and cook on Low for 6-7 hours, or until rice and cabbage are tender.
Taste and adjust seasoning if needed. Serve hot.
