Ingredients
  

  • 1 lb ground beef lean
  • 1 onion diced
  • 3 cloves garlic minced
  • 1/2 head cabbage chopped
  • 1 can diced tomatoes 28 oz, with juice
  • 1 can tomato sauce 15 oz
  • 4 cups beef broth low sodium preferred
  • 1/2 cup uncooked white rice
  • 1 tsp paprika
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper

Instructions
 

  • In a skillet over medium heat, brown the ground beef with the diced onion until no longer pink. Drain excess fat if needed.
  • Add the minced garlic and cook for another minute until fragrant.
  • Transfer the beef mixture to a slow cooker. Add chopped cabbage, diced tomatoes with juice, tomato sauce, beef broth, uncooked rice, paprika, salt, and black pepper.
  • Stir everything to combine well.
  • Cover and cook on Low for 6-7 hours, or until rice and cabbage are tender.
  • Taste and adjust seasoning if needed. Serve hot.

Notes

For a spicier version, add a pinch of red pepper flakes or swap in fire-roasted diced tomatoes.
