Slow Cooker Smothered Steak

Tender slow-cooked steak simmered in a rich brown gravy with onions and bell peppers. This hearty comfort-food classic is deeply savory, full of flavor, and perfect served over mashed potatoes or rice.

Ingredients
  

  • 2 lbs sirloin steak or chuck steak
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp steak seasoning such as Montreal seasoning
  • 4 tbsp butter
  • 1 onion sliced
  • 1 green bell pepper sliced
  • 2 cloves garlic minced
  • 2 tbsp all-purpose flour
  • 1 tbsp brown sugar
  • 1 tbsp Worcestershire sauce
  • 2 packets brown gravy mix 1 oz each, divided
  • 2 cups water

Instructions
 

  • Season both sides of the steak with smoked paprika, onion powder, and steak seasoning.
  • Heat a skillet over medium-high heat and quickly sear steaks for about 2 minutes per side until browned.
  • Transfer steaks to the bottom of the slow cooker.
  • In the same skillet, melt butter and cook onion and bell pepper until softened. Stir in garlic and flour and cook for 1 minute.
  • Pour vegetable mixture over the steak in the slow cooker.
  • Whisk together 1 packet of gravy mix, water, Worcestershire sauce, and brown sugar. Pour over the steak.
  • Cover and cook on LOW for 6 hours or HIGH for 4 hours until steak is tender.
  • Carefully remove steak. Whisk remaining gravy mix into the slow cooker liquid until thickened, then return steak to the gravy.
  • Serve hot with mashed potatoes, rice, or noodles.

Notes

Chuck steak becomes especially tender with low-and-slow cooking. Add mushrooms for even richer gravy flavor.
